Het in 2000 opgerichte Toscaanse wijnhuis van de charismatische Bibi Graetz heeft de afgelopen twintig jaar een ware cultstatus bereikt. Het wijnhuis kent met zijn eigenzinnige wijnen én kunstzinnige etiketten vele liefhebbers. Daar hoort ook de internationale wijnpers bij, die inmiddels de topwijnen Colore en Testamatta jaarlijks zeer hoge punten toekent.
De Bibi Graetz Toscana Casamatta Bianco is afkomstig van oude wijngaarden in de Toscaanse Maremma. De wijngaarden liggen tussen Capalbio en Argentario, aan de zuidelijke kuststreek van Toscane. De wijn is een blend van Ansonica, Trebbiano, Vermentino. De druiven worden ontsteeld en daarna zacht geperst (met droogijs). Het sap wordt vergist in RVS tanks op een hele lage temperatuur om frisheid te bewaren. Dit proces duurt twee weken. Na het blenden rijpt de wijn nog 3 maanden in RVS tanks. In het glas is de Casammatta bleekgeel met in de neus peer, citroenschil, sinaasappel en perzik, bloesem en een hintje munt. In de mond is de wijn fruitig en verfrissend. Licht filmend. Gelaagde wijn. Heerlijk om zo van te genieten en natuurlijk bij een pasta met zeevruchten.

Here's a great value proposition from Bibi Graetz made with Ansonica, Vermentino and Trebbiano from the Tuscan island of Giglio. The 2023 Isola del Giglio Casamatta Bianco offers bright primary fruit, minty apple, citrus and crushed stone. The wine is made in stainless steel only inside what Bibi describes as the smallest cooperative winery in Italy (located in a garage on this sun-kissed island).
Bibi Graetz is reducing his production numbers, going from 500,000 bottles produced in 2013 to less than half that number in recent years. His top-shelf Colore has been reduced from 50,000 bottles in 2020 to only 15,000 bottles now, with fruit sourced from two vineyard sites. He is committed to adopting what he calls "a more selective approach." As someone who has studied his portfolio for many years, I still have concerns over the ever-changing wines and the introduction of new products (and the removal of others), which could cause confusion among consumers. As Bibi's new vineyard sites in Fiesole become mature, the portfolio will also consolidate.

This is lively and electric on the palate, with sliced apples, pears, granite and salt on both the nose and palate. Umami, grilled seaweed and salt in the finish. This is the first year that all the grapes come from the island of Giglio. All stainless steel. Ansonica with some vermentino and trebbiano. Drink now.

Het wijnhuis Bibi Greatz is in 2000 opgericht in het stadje Fiesole in Toscane. Bibi Graetz wordt gezien als één van de meest getalenteerde wijnmakers in Toscane. Zijn vader is Israëlisch en zijn moeder Noors, hij is echter geboren en getogen in Florence. Met zijn Noorse vrouw en 4 kinderen bewoont hij een deel van het prachtige oude kasteel.

Bibi is afkomstig uit een kunstenaarsfamilie, totdat hij zelf besloot om een andere weg in te slaan en ging het wijnmaker vak achteraan. Hij kocht een wijngaard van 8 hectare met 60 jaar oude wijnstokken. Vandaag is Graetz een van de grootste namen in Toscane. Aan de labels op de flessen is te zien dat Bibi Graetz uit een artistieke familie komt, de afbeeldingen op de etiketten heeft hij namelijk zelf geschilderd. De wijnen zijn zeldzaam en beperkt. De productie van Testamatta uit slechts 10.000 flessen per jaar.
