Description
Founded in 2000 by the charismatic Bibi Graetz, the Tuscan winery has achieved true cult status over the past twenty years. The winery has many fans with its idiosyncratic wines and artistic labels. This also includes the international wine press, which now awards the top wines Colore and Testamatta very high points every year.
The wine is named after the single vineyard Vincigliata in Fiesole. The vineyard is rich in galestro (porous stone that breaks easily). The vineyard faces south and southwest and is surrounded by a forest. The wine is spontaneously fermented with natural yeasts in large wooden barrels (30 hl) without temperature control. This takes 10 days, after which the wine is macerated on the skins for a few more days. The wine then matures for 18 months in old large wooden barrels. In the mouth this is an expressive Sangiovese with an aromatic character on the one hand, and many earthy tones on the other. Complex with good acids, tannin and a lot of length.

I have not tasted this Bibi Graetz wine since the 2014 vintage. Featuring his artwork on the front label (created when Bibi was a 23-year-old art student), the 2022 Soffocone di Vincigliata is all Sangiovese, mostly from his family's historic plots, both warm parcels and cooler parcels, near Fiesole in Vincigliata. This wine has made big improvements over the years. Showing a dark hue and extra concentration for the grape, it delivers blackberry, lead pencil and powdery tannins on the finish. It ages in oak for 18 months in Bibi's crazy hotel-turned-winery facility, but only 0.5% of the oak is new. The rest of the barrels are 20 years old or more. Bibi seeks oxygen exchange, and he vinifies his parcels separately. I asked him about coopers, but he says he is less interested in brands and uses a mix of barrels from all over.
Bibi Graetz is reducing his production numbers, going from 500,000 bottles produced in 2013 to less than half that number in recent years. His top-shelf Colore has been reduced from 50,000 bottles in 2020 to only 15,000 bottles now, with fruit sourced from two vineyard sites. He is committed to adopting what he calls "a more selective approach." As someone who has studied his portfolio for many years, I still have concerns over the ever-changing wines and the introduction of new products (and the removal of others), which could cause confusion among consumers. As Bibi's new vineyard sites in Fiesole become mature, the portfolio will also consolidate.

Blueberries, minerals, violets and hints of graphite. Medium-bodied with very well-integrated tannins that give presence and beauty to it. Succulent and juicy. Polished, savory tannins add to the pleasure. Bright acidity, too. Drinkable now, but even better in a year or two.

The 2022 Soffocone di Vincigliata is dusty and floral in character, mixing rose petals with scant black cherry and clove. It’s silken in feel, with cool-toned acidity and a liquid floral concentration that coats the senses. The 2022 leaves hints of baking spice and dried strawberries while tapering off gently tannic and long.

The 2022s from Bibi Graetz display undeniable elegance and a lifted character that makes them quite approachable today, yet also balanced for medium-term cellaring. There’s a newfound purity that carries throughout the portfolio. I’m also loving Graetz’s new lineup of varietal wines; the Merlot and Cabernet Franc are particularly impressive. Sadly, these wines also carry a premium price that will put them out of reach from the average collector.

The Bibi Greatz winery was founded in 2000 in the town of Fiesole in Tuscany. Bibi Graetz is considered one of the most talented winemakers in Tuscany. His father is Israeli and his mother Norwegian, but he was born and raised in Florence. He lives in part of the beautiful old castle with his Norwegian wife and 4 children.

Bibi comes from a family of artists, until he himself decided to take a different path and left the winemaker profession behind. He bought an 8 hectare vineyard with 60 year old vines. Today Graetz is one of the biggest names in Tuscany. The labels on the bottles show that Bibi Graetz comes from an artistic family, as he painted the images on the labels himself. The wines are rare and limited. Testamatta production from just 10,000 bottles per year.
