Description
The charismatic Bibi Graetz has only been active in Tuscany for almost twenty years, but has already achieved cult status with his pure terroir expressions of local Tuscan grape varieties. For Bibi Graetz, the authenticity of the region is paramount. No international grape varieties here, but 100% Sangiovese in all its glory. Bibi Graetz wines are ultimately pure expressions of terroir and the unique characteristics of a vintage.
The Testamatta is a wine that comes from the vineyards at the highest altitudes and in the windiest places. In 2022, Bibi Graetz wanted to exclude the vineyards that do not fully emphasize the typical aspects of Sangiovese, such as red berries, strawberry, cherry, raspberry, incredible freshness and striking acidity. These characteristics make this variety unique. That is why he decided to reduce production to focus only on these vineyards.
The Testamatta comes from vineyards of very old vines spread over the various vineyards cultivated by Bibi Graetz in both the provinces of Siena and Florence in Tuscany. The vineyard(s) are actually small postage stamp plots with vines that are 80 years or older, and each plot represents enological properties that were specifically selected for their individual character or uniqueness. After hand picking and fermentation, the Sangiovese is aged in French oak barriques for a period of 30 months after which the wine is bottled and receives a further bottle aging of at least 6 months in the cellars of Bibi Graetz. In the glass the wine has a deep ruby red color with an intense and complex bouquet of scents, blueberries, cherries, violets, juniper berries, rosemary, cloves and cocoa. The taste is elegant, with great finesse and complexity. The wine is powerful, full of fruit with velvety tannins. The aftertaste is soft, intense and very long lasting.

The 2021 Testamatta is Sangiovese sourced from various hilltop vineyards spanning different cool microclimates. The ideal is to underline the transparency and fragility of the variety. Fruit from the Olmo Vineyard plays a big role and “gives a strong imprint to this wine,” Bibi says. Testamatta offers fresh aromas of violet, rose, forest green and candied orange peel. Bibi says 2021 was generally warmer than 2020, but all three vintages—2020, 2021 and 2022—are considered hot. He is upbeat regarding 2023 thanks to all the rain. Testamatta shows an earthy note that gives this wine (with 120,000 bottles made) a slightly more accessible personality. The tannins are lightly managed and the oak framing is down to an elegant minimum. Bibi buys 1% new oak each year, and his oldest barrels date back to 2003. He does not pull leaves, and he employs methods that do not concentrate his fruit so he can safeguard the typicity of Sangiovese. Winemaking is as natural as possible. The beautiful results are classic and bright. He strives to keep alcohol contents below 13%.
This is an impressive and controversial set of new releases from the Maverick of Fiesole (Tuscany), Bibi Graetz. I found both his new releases of Colore and Testamatta to be exceptional. Thanks to a new winery (built cleverly inside an old hotel) and beautiful new vineyard sites, some with old vines, these are surely the best wines he has made. Bibi is more committed than ever to creating expressions of elegance with Sangiovese and local Tuscan grapes. He is also presenting three new wines this year as part of his Balocchi series. “Balocchi” is an Italian word for “playfulness” or “game making,” but it also implies a hint of mischievousness. The three wines are what he calls a “component tasting” because each headlines an important indigenous grape from Tuscany. Balocchi N. 8 is Canaiolo, N. 1 is Sangiovese and N. 3 is Colorino. “I was inspired by the real wines of Tuscany made with old vines like we saw in the 1940s and 1950s,” says Bibi Graetz. Tuscany can stand up to the best wines of the world, and its true winemaking DNA is found in these grapes that were sadly abandoned and replanted when Italy embraced industrial winemaking in the 1970s and 1980s. This is my tribute to those grapes, and in a sense, these wines take us back years to where we started.” The three Balocchi wines do indeed showcase elegant expressions of each grape. However, I am disappointed in the outrageous pricing that makes these wines so utterly unaffordable and unobtainable. The pricing philosophy is difficult to understand. There are 2,000 bottles of each, or 6,000 bottles in the entire series.

Bibi Graetz has long been tinkering with his formula for this wine, and this vintage represents a new chapter. The 2020 Testamatta is a blend of Sangiovese from old and new vines, with a priority on cooler growing conditions (and even a few northern exposures). In the wake of climate change, and in the pursuit of elegance, Bibi is changing his approach. He also has a new vineyard property near Fiesole, and the introduction of these grapes (from a breezy, high-elevation site) are what gives Testamatta its beautiful clarity, sharpness and lifted bouquet. The new Fiesole fruit makes up about 30% to 35% of this wine. The results are vibrant, transparent and fresh both in terms of acidity and aromatic intensity. This is a wine in transformation and a wine to watch.

Jewel-like vivid ruby, captivating waves of raspberry, red cherry, finely boned tannins, carefully constructed with flinty edges of crayon, liquorice, slow build, generous and yet reserved. Love the sculpting of this wine, it's just so impressive. From estate-owned plots across Tuscany where the vines range from 5 years old up to 80 years old from 400m to 600m altitude. Natural yeasts, six manual punch downs per day, 10 days maceration maximum and barrel ageing with no new oak.

Beautifully fragrant on the nose, delicately scented and inviting with subtle wild flower scents, red and black berries and sweet spices. Chalky and powdery tannins support super bright acidity which gives this such a sharp, thrilling and lively expression. Tannins are super fine but have a spiced edge that grips and holds interest, supportive but not overpowering, letting the acidity and bright fruit flavours shine through. Beautifully delineated and expressed, elegant, refined, totally beguiling yet with layers of flavour and intensity and such a long finish. Feels supremely drinkable and that is such a feat at this young stage. Well worked, balanced, and enjoyable with flashes of heat and spice dotting the finish. Really wonderful and totally charming.

The 2021 Testamatta, 100% Sangiovese, is pale to medium garnet-purple in color. It slowly unfurls to offer fragrant notes of kirsch, redcurrant jelly, and black raspberries, followed by suggestions of iron ore, rose oil, and tilled soil. The medium-bodied palate has a firm, chewy texture with a refreshing line supporting the intense red berry and savory layers, finishing long and minerally. This is beautiful!

The Bibi Greatz winery was founded in 2000 in the town of Fiesole in Tuscany. Bibi Graetz is considered one of the most talented winemakers in Tuscany. His father is Israeli and his mother Norwegian, but he was born and raised in Florence. He lives in part of the beautiful old castle with his Norwegian wife and 4 children.
