Description
The Colore is the flagship and top model of Bibi Graetz and is actually a single-vineyard wine as over 90% of the grapes come from old vines (these are majestic plants of 80 to 135 years old) at high altitude in the Lamole where Bibi has five hectares.
The 2022 Colore is a blend of: Sangiovese 96%, Canaiolo 3%, Colorino 1% The Colore is the wine that amazes you. Old vines are capable of creating truly incredible wines with an unimaginable complexity. Fragrances of flowers and blackberries make you dream away, while the softening taste makes you relax. The perfect terroir, together with vines over 80 years old, are the winning elements that make the birth of this sublime wine possible.
The Colore is a Sangiovese wine made from some of the oldest and rarest vineyards in the region. The Sangiovese gives the wine structure and power. Only the best few barrels of the entire production become Colore. The grapes of Colore were hand-picked from 4 vineyards: Lamole, Vincigliata, Olmo and Sienna. Each vineyard was harvested up to 8 times and the grapes are each hand-harvested at the right point of ripeness. After the first selection in the vineyard, a second selection takes place at the winery before destemming. At this stage the berries were gently pressed and placed in open-topped barriques, with great care taken to keep each parcel separate. Fermentation is carried out by indigenous natural yeasts (i.e. the yeasts on the grape) with 6 to 8 manual pushdowns per day, without temperature control for 2 weeks with 1 additional week of maceration on the skins. After fermentation, the wine is transferred to new barriques, where malolactic fermentation takes place. The wine matures for 3 years before being marketed.
Give the Bibi Graetz Colore Sagiovese time to mature and fully open and our advice would be to not open it until around 2025/2026, although it would be great fun to try the development with a Coravin.

The Bibi Graetz 2022 Colore sources its fruit from only two sites in this vintage: from 60-year-old vines in the Olmo vineyard (with 400-meter-plus elevations) and 88-year-old vines in Lamole (Chianti Classico). The vines are mostly south-facing, but the elevations are key. Meanwhile, Testamatta comes from mostly cool, north-facing sites. These results show lots of vertical heft and sharp tones with bright fruit, mineral graphite and blue flower. Bibi seeks transparency in his wines, and although the 2022 vintage delivers heavier fruit aromas overall, the wine does offer a pretty textural lightness.
Bibi Graetz is reducing his production numbers, going from 500,000 bottles produced in 2013 to less than half that number in recent years. His top-shelf Colore has been reduced from 50,000 bottles in 2020 to only 15,000 bottles now, with fruit sourced from two vineyard sites. He is committed to adopting what he calls "a more selective approach." As someone who has studied his portfolio for many years, I still have concerns over the ever-changing wines and the introduction of new products (and the removal of others), which could cause confusion among consumers. As Bibi's new vineyard sites in Fiesole become mature, the portfolio will also consolidate.

Medium- to full-bodied with focused and poised tannins that are wonderfully integrated and rather endless. Crunchy and chewy at the end. Such presence. You want to spend time with this wine. A top selection from two vineyards Olmo and one in the village of Chianti Classico in Lamole, 60 and 88 years old, respectively. This is a wine that gives great pleasure now, but will be even better in two or three years.

The Bibi Greatz winery was founded in 2000 in the town of Fiesole in Tuscany. Bibi Graetz is considered one of the most talented winemakers in Tuscany. His father is Israeli and his mother Norwegian, but he was born and raised in Florence. He lives in part of the beautiful old castle with his Norwegian wife and 4 children.
