About Envínate

Envínate (Spanish for "wine yourself") is the collaborative project of four friends – Roberto Santana, Alfonso Torrente, Laura Ramos, and José Martínez – who met while studying oenology in Alicante. What began as a wine consultancy in 2005 has grown into one of Spain's leading wine initiatives.
The team works with indigenous grape varieties on unique, Atlantic-influenced terroirs in places like Ribeira Sacra and the Canary Islands. The approach is minimalist and focused on pure terroir expression: hand harvesting, fermentation with wild yeasts, minimal intervention, and aging in used barrels or concrete. Sulphur is added only when strictly necessary at bottling.
The result is wines that express their origins in a lively, honest and uninhibited way.

Grapes & Tasting Notes: Lousas Viñas de Aldea

Aldea means "village" in Galician – this wine is therefore Envínate's village cuvée, sourced from several plots of very old vines (60+ years) on steep slate slopes in Ribeira Sacra, at an altitude of 400 to 600 metres.

The 2023 vintage is again a blend of approximately 80% Mencía, supplemented with local grape varieties such as Alicante Bouchet, Brancellao, Godello, Caiño, Merenzao, Mouraton, Palomino, and Souson. The grapes were harvested by hand, and some whole-bunch fermentation took place in concrete vats and small plastic containers. The wine was aged for 11 months in used oak barrels on the fine lees, without the addition of sulfur.

The style is fresh, open, and mineral, with aromas of red and dark fruit, wild herbs, and a light pepperiness. Pure and chalky on the palate, with lively acidity, delicate tannins, and a long, weightless finish. An expression of altitude, slate, and Atlantic tension.

  • Roasted beetroot with goat cheese, walnuts and balsamic vinegar
The earthy beetroot, fresh cheese and nuttiness complement the mineral and spicy character of the wine.

  • Pasta with mushrooms, garlic and thyme in a light cream sauce
Earthy flavours and soft texture combine well with the fine tannins and floral profile.

  • Grilled chicken leg with rosemary, lemon and roasted vegetables
Spicy notes and juicy meat harmonize with the refined structure and acidity of the wine.

  • Tortilla Española with onion and potato, served with pimientos de padrón
The soft texture of the tortilla and the mild bitterness of the pimientos enhance the wine without being overpowering.

  • Lentil salad with roasted carrot, cumin and fresh parsley
The structure and earthy elements in the dish reflect the character of the wine, while fresh herbs provide tension.

Envínate (translates as "wine itself") is the brainchild of 4 friends, winemakers Roberto Santana, Alfonso Torrente, Laura Ramos and José Martínez. This gang of four was founded in 2005 while studying oenology at the University of Miguel Hernandez in Alicante. After graduating, they formed a winemaking consultancy, which evolved into Envínate, a project focused on exploring distinctive plots of land, mainly in the Atlantic regions of Ribeira Sacra and the Canary Islands. Their shared goal is to make very pure and authentic wines that express the terruño of each parcel in a clear and concise way. To this end, no chemicals are used in any of the Envínate vineyards, all plots are picked by hand, the grapes are trodden and the wines are fermented exclusively with wild yeasts, with a varying proportion of whole grape bunches included. Before maturing, the wines are aged in old barrels and concrete, and sulfur is only added at bottling when necessary. The result is some of the most exciting and honest wines produced in Spain today.
