Bet your friends think this wine costs twice as much? HITO is a dynamic wine , modern, along the lines of the winemaker. HITO breaks the trend in the development of young wines. The CEPA 21 Hito Tinto is produced with grapes harvested from the lowest parts of our vineyards. The alcoholic fermentation takes place at a controlled temperature in steel tanks for 12 days, followed by a malolactic fermentation for 30 days. Then the wine matures for an average of 8 months in French oak barrels. Cepa 21 has set a new standard in the Ribera del Duero : technology, facilities , research, marketing . The vineyards of Bodegas Cepa 21 are one of its greatest assets. They are located at an altitude of between 750 and 900 meters above sea level and face north. Both factors allow the grapes to ripen gradually, giving them complexity and freshness. The project has 50 hectares of its own vineyards on soils of silty sand, clay or limestone, most of them very close to the winery and planted with the clone of the area's century-old vineyards (the purest Tempranillo from Ribera del Duero). The winery is equipped with fully equipped facilities, consisting of a tasting room with a beautiful view of the barrel room, a terrace that is a true viewpoint over a sea of vineyards and a hall with a spectacular window that combines the modernity of the complex with the tradition of the vineyard, Cepa 21 is pure minimalism and efficiency. The 'Hito' ('milestone') is a modern-styled Ribera del Duero, elegant with a beautiful ruby red color, a ripe nose of blackberries, black cherry, strawberry, pepper and incense, quite powerful and deliciously fruity (cassis) in the mouth. Very long finish, pleasantly spicy and with nicely integrated wood and vanilla tones. Nevertheless, there is a noticeable freshness that saves the wine from a tiring aftertaste.
The 2023 CEPA 21 HITO is a modern, youthful expression of Tempranillo from Ribera del Duero. The wine is full-bodied with aromas of ripe berries, black cherries and a hint of spice, supported by supple tannins and fresh acidity. Its energetic, approachable style and medium to full body make it an excellent match for a wide range of savoury dishes, especially grilled or fried meats, roasted vegetables and herbal notes.
1. Grilled burgers with red onion and spicy tomato salsa
The juicy structure of the burger matches the fruity character of the wine. The tomato salsa enhances the ripe red fruit aromas and adds a light acidity that blends nicely with the fresh acidity of the wine.
2. Spicy meatballs in tomato sauce with rosemary and thyme
The spiciness and heartiness of this dish go well with the soft tannins and spicy profile of the HITO. Tomato sauce and Tempranillo are also a classic combination due to their shared acidity and umami notes.
3. Roasted peppers stuffed with rice, mushrooms and grated cheese
The sweet notes of roasted peppers harmonize with the fruitiness of the wine, while the filling provides earthiness and structure. The cheese adds a soft creaminess that combines well with the round texture of the wine.
4. Ribeye steak with coarse black pepper and a pinch of sea salt

Opaque ruby. Smoke-tinged cherry and cassis, dark chocolate, cracked pepper and a hint of musky flowers on the nose. Chewy and focused in the mouth, offering bitter cherry and dark berry flavors that deepen slowly and spread out with air. Sweeter on the persistent finish, which features sappy blue fruit character and supple tannins that come in late. This sexy wine is showing quite well right now and I suspect that it won't ever really shut down. Fermented in stainless steel tanks and aged for eight months in used and new French oak barrels.

"Na het proeven ’s ochtends werd de Hito Tempranillo rosado s avonds ontspannen gedronken, bij gerookte Sockeye zalm uit Alaska – en dat was een kostelijke combinatie. De blank oranje, pietsje roze wijn komt uit Ribera del Duero, tamelijk noordelijk in Spanje. De tempranillo die daar groeit, en volstrekt domineert, is een regionale variant van de moederdruif uit Rioja (en wordt langs de Duero dikwijls tinto fino genoemd). Het bedrijf achter de Hito Tempranillo is Bodegas Cepa 21, een dochter van de familiefirma Bodegas Emilio Moro. Speciaal voor Cepa 21 bouwden de broers Javier en José Moro samen met enkele vrienden een hypermoderne designkelder (met restaurant) waar druiven van 50 hectare worden verwekt. Cepa 21 was founded by one of Ribera del Duero's best winemakers: Emilio Moro. Since 2022, CEPA 21 has stood on its own two feet and is led by Jose Moro (the brother of Javier Moro, the owner of Emilio Moro). Bodegas Cepa 21 is a boutique winery located in Castrillo de Duero, a Valladolid village in the area known as the Golden Mile. A winery created to dream in wine, combining tradition and modernity with a unique and exquisite terroir. A real commitment to enhance the best qualities the land has to offer, choosing north-facing vineyards to obtain wines with soul and a unique freshness. With the Tempranillo variety as its flagship, Bodegas Cepa 21 presents a range of five wines: Hito Rosé, Hito, Cepa 21, Malabrigo and Horcajo. They all reflect in each glass a respectful elaboration of the variety, the freshness of the Tempranillo variety and the know-how and experience of the creator, José Moro.
Cepa 21 was born with the aim of becoming a differential project and was built by José Moro's distinctive ideas, creativity and unique vision. But Jose Moro's disruptive spirit is in large part the result of his ancestors' legacy. More than a hundred years ago, his grandfather chose his own clone of the queen variety (Tempranillo) to achieve the unique character of the wines. His grandson, generations later, followed suit and made innovation one of the driving forces behind his business.
