Description
The vineyards of Bodegas Cepa 21 are one of its greatest assets. They are located at an altitude of between 750 and 900 meters above sea level and face north. Both factors allow the grapes to ripen gradually, giving them complexity and freshness. The project has 50 hectares of its own vineyards on soils of silty sand, clay or limestone, most of them very close to the winery and planted with the clone of the area's century-old vineyards (the purest Tempranillo from Ribera del Duero). The winery is equipped with fully equipped facilities, consisting of a tasting room with a beautiful view of the barrel room, a terrace that is a true viewpoint over a sea of vineyards and a hall with a spectacular window that combines the modernity of the complex with the tradition of the vineyard, Cepa 21 is pure minimalism and efficiency. The word Hito means milestone and is often a stone column used to indicate direction or distance on roads or to demarcate an area. Hito wines were born from the idea of offering a wine with the freshest, most aromatic version of what Emilio Moro (CEPA21) can offer without extensive aging and using the same grapes as in their great red wines. It is new, it is a milestone in the way of making wine and it is a milestone in price.
The grapes for this great rosé have only been macerated for a few hours at low temperature. The fermentation is between 12 and 15 degrees for 20 days and then has had 3 months of maturation on its lees (sur lie). The Hito rosé has a very light pink color like a Provence rosé, but with the class of the Tempranillo grape which provides more complexity. In the nose the Hito rosé is intense, fresh and crisp with ripe red fruits such as strawberries and raspberries, which later evolves into more flowers with more complex tones. The feeling in the mouth is very fresh and silky with balanced acidity. The aftertaste is long and pleasant and this is one of the best rosés in its price range. This is incomparable with the many rosés that pay more attention to the bottle and marketing than to the content, but anyway this also comes from the Moro family. Delicious as an aperitif, but also great as a dinner wine with Asian food or Sushi for example.

The CEPA 21 HITO Rosé is a refined, modern rosé from Ribera del Duero, made from Tempranillo. This rosé is characterized by fresh red fruit such as raspberry, strawberry and red currant, complemented by a light spiciness, floral tones and a lively acidity. The wine is dry, elegant and fresh, but with sufficient structure to be versatile at the table.
1. Salad with watermelon, feta and mint
The juiciness of the watermelon and the saltiness of the feta together create a nice contrast that perfectly matches the fresh acidity and fruitiness of the rosé. The mint adds a spicy freshness that matches the floral aromas of the wine.
2. Grilled chicken skewers with paprika powder and lemon
The light spiciness and grilled character of the chicken find a good partner in the fresh, slightly spicy structure of the rosé. The lemon enhances the lively character of the wine.
3. Pasta with roasted vegetables such as zucchini, pepper and tomato
The soft texture of the pasta and the roasted flavours of the vegetables complement the ripe red fruit and light spiciness of the rosé. This is an easy, accessible pairing for any weekday.
4. Salmon wraps with cream cheese, cucumber and dill
The creaminess of the cream cheese and the soft character of the salmon are nicely balanced by the freshness of the wine. The spicy dill matches the floral undertones in the rosé.
5. Tomato and basil gazpacho
The chilled, fresh nature of gazpacho is a perfect match for a dry rosé. The acidity and spiciness in the soup are beautifully captured by the structure and aromas of the wine, without overwhelming them.
6. Couscous salad with chickpeas, cucumber, red onion and lemon dressing

Cepa 21 was founded by one of Ribera del Duero's best winemakers: Emilio Moro. Since 2022, CEPA 21 has stood on its own two feet and is led by Jose Moro (the brother of Javier Moro, the owner of Emilio Moro). Bodegas Cepa 21 is a boutique winery located in Castrillo de Duero, a Valladolid village in the area known as the Golden Mile. A winery created to dream in wine, combining tradition and modernity with a unique and exquisite terroir. A real commitment to enhance the best qualities the land has to offer, choosing north-facing vineyards to obtain wines with soul and a unique freshness. With the Tempranillo variety as its flagship, Bodegas Cepa 21 presents a range of five wines: Hito Rosé, Hito, Cepa 21, Malabrigo and Horcajo. They all reflect in each glass a respectful elaboration of the variety, the freshness of the Tempranillo variety and the know-how and experience of the creator, José Moro.
Cepa 21 was born with the aim of becoming a differential project and was built by José Moro's distinctive ideas, creativity and unique vision. But Jose Moro's disruptive spirit is in large part the result of his ancestors' legacy. More than a hundred years ago, his grandfather chose his own clone of the queen variety (Tempranillo) to achieve the unique character of the wines. His grandson, generations later, followed suit and made innovation one of the driving forces behind his business.
