Description
At Cignomoro it is very consciously about the choices they make and have made. They consciously chose Puglia, consciously for the vineyards and to grow their vines there. They chose this because they believe that they can make wine that speaks here. The power of the sun, wind and sea ensures that every sip is unique. They chose the “red lands” between Manduria and Carosino. With the latest vinification techniques, without forgetting the value of a family winery, they ensure that the wines of Cignomoro can be counted among the best in Puglia.
The primitivo grapes for this Cignomoro Primitivo di Manduria are picked by hand. Fermentation takes place at controlled temperature. Maceration in steel tanks and barriques. The wine matures further in French barriques 65% new and 35% used barriques.
The Cignomoro Ottocento Minutolo is made for 100% from the Fiano Minutolo. The Fiano Minutolo has been growing in Puglia since the thirteenth century. It was long thought to be a variation of the Fiano we know from Avellino, which is why it was called the Fiano Aromatico and the Fianello. More recently he was given the name Fiano Minutolo. The Fiano Minutolo is a white grape with aromatic characteristics. The berries are rather small with a firm skin. A golden yellow color with amber tones. She reaches good maturity early in September. The wines are dry paired with a rich pallet of fruity and floral aromas.
The grapes get a cold pressing and then a slow fermentation in stainless steel place (16-18C). The maturation also takes place on stainless steel stenches. The Cignomoro Ottocento Minutolo is bright straw yellow in the glass. Intensely aromatic with rich and fragrant aromas of yellow peach, ripe apricot, combined with floral notes of orange blossom. The nose is absolutely reflected in the palate, combined with a fresh minerality and with a good lingering finish.
