The name Blue Belle is completely appropriate for this beautiful, lush and fresh Chardonnay - a real "Belle"! Produced by the Australian winery RedHeads Studio . A breathtaking beauty from the Adelaide Hills made from the well-known and characteristic Chardonnay grapes. The small vineyard is located on a higher part of the Adelaide Hills and only produces a very low yield of grapes that are always picked during the cooler hours of the night. They are then immediately pressed to preserve the freshness. Fermentation in oak (Hungarian) barrels provide subtle hints of cinnamon, cloves and vanilla. Stirring once a week, and a full malolactic fermentation, which softens the sharp acids. All this resulted in a deliciously round, balanced and flaming clean white wine.

This full Blue Belle with delicious aromas of honeysuckle, toast, apple and peach has a long, impressive taste with a nice structure, slightly nutty with lots of fruit (apple and peach). Very well balanced. The acidity of the wine ensures that the wine can be drunk for at least 6 years. The wine will then develop even further, which will create even more interesting flavors.

1. Baked salmon with lemon butter and dill
The creamy butter sauce and the fat of the salmon are balanced by the fresh acidity in the wine. The dill complements the spicy notes.

2. Pasta with zucchini, Parmesan and lemon zest
The light creaminess of the Parmesan and the freshness of the lemon support the fruity character of the wine and enhance the soft wood tones.

3. Grilled chicken with tarragon and fennel salad
The spiciness of tarragon and the aniseed-like freshness of fennel match well with the refined and expressive character of the Chardonnay.

4. Risotto with mushrooms, leek and old cheese
The earthy tones of the mushrooms blend with the full mouthfeel of the wine. The cheese gives a savoury accent that combines well with the soft oak influences.

5. Scallops with cauliflower cream and roasted almond
The delicate structure of the scallops matches the freshness of the wine. The cauliflower and almond add softness and depth that supports the wine.

6. Baked lobster with citrus butter, fennel and saffron
The buttery, slightly sweet lobster enhances the roundness of the wine. The citrus and saffron bring tension and aromatic complexity that complements the Chardonnay nicely.

Redheads Studio winery is located in South Australia in the town of Tanuda, in the Barossa Valley where the dedicated team behind Redheads work tirelessly, from the vine to the bottle and beyond, to ensure the wines can always be in their best condition drunk.

It all started with a few Aussie winemakers who went to France to show the 'old hands' some new tricks there. Australian wine had conquered the world in the 1970s and 1980s. That's why Tony Laithwaite brought some Aussies to France. It was there that the very beginning of RedHead's new viticultural movement was laid.
In a small shed in McLaren Vale, a former Indian restaurant, some winemakers took on the challenge of making their dream come true: making beautiful, creative wines in small volumes with primary focus on quality.
They wanted to make wines without being bothered by all kinds of business worries, which resulted in an explosion of creativity and experiments.

Meanwhile, winery Redheads is making great international progress and they still give young talents the opportunity to let their creativity and talents loose on the best grapes in the region. Redheads Wines says of itself: “A free-spirited, movement liberating the best grapes from the premium labels to make wines with soul, character and personality”
