Hubert Lamy founded Domaine Hubert Lamy in 1973, after working with his father for many years. At the time, this estate consisted of only a few hectares, mainly regional appellations. The domain has developed considerably since the 1990s. Think of new vines that were bought or rented such as: Saint-Aubin 1er Cru “Clos de la La Chatenière”, “Derrière chez Edouard”, “Murgers des Dents de Chien”, “Clos du Meix”, Santenay “Clos de Hâtes”, Santenay 1er “Cru Clos des Gravières” and Chassagne Montrachet 1er Cru “Les Chaumées”. New vines were also planted in Saint-Aubin 1er cru “En Remilly”.
After studying viticulture and wine marketing, Olivier Lamy completed several internships at the top estates in France. He joined his father in 1995. He brought new ideas with him, which he tested both in the vineyard and in the barrel room, with Hubert Lamy as the guarantor of traditions. Karine joined Olivier in 2005 to take care of the administrative and commercial aspects. Today, the estate covers 18.5 hectares, of which 85% is Chardonnay and 15% Pinot Noir. They produce around 100,000 bottles per year and export their bottles to 33 countries worldwide.
We are in Chassagne Montrachet at the 1er Cru Les Chaumées. The vines in this vineyard were planted in 1989 and 1970. Hubert Lamy owns 0.23 hectares in this 1er Cru and makes only Chardonnay here. Hubert Lamy's yield was reduced by frost in 2019, averaging around 25 hectoliters per hectare. William Kelley is critical of the 2019 wines but wrote: "It is hard to think of anyone in the Côte d'Or who understood the potential of the vintage in Chardonnay better than Olivier Lamy".

Notes of orange oil, white flowers and pear, complemented by hints of smoke and fresh bread, introduce the 2019 Chassagne-Montrachet 1er Cru Les Chaumées, a medium to full-bodied, satiny and precise wine that's bright and racy, with tangy acids and a chalky finish. This is a cuvée that really seems to have taken on another dimension in the last few vintages.
Sometimes I contemplate what I think might be the easiest way to make enemies in Burgundy: A Michelin Guide-style ranking, out of three stars, of the region's best domaines. Olivier Lamy would be one of three white wine producers in the Côte de Beaune to whom I would unquestionably award three stars. Last year, I wrote that I ran the risk of exhausting superlatives if I attempt to articulate just how much I admire these wines, and this year is no different. In 2019, yields were reduced by frost, averaging around 25 hectoliters per hectare, yet the wines aren't defined by it as they were, for example, in 2016, when an abundance of second- and third-generation grapes complicated the choice of harvest date. Concentrated and textural, with prodigious levels of dry extract, they will demand more patience than his superb 2018s, yet in the end I suspect they will prove even finer wines. As ever, given Lamy's cold cellars and his winemaking approach, the wines evolve slowly; this is far from the easiest tasting of my three months of visits, and I confess to succumbing to the venal sin of smugness at having left the afternoon empty when I witnessed two fellow critics arrive for our shared appointment fresh from six of seven preceding tastings. Attention to what is going on chez Lamy is liberally repaid, however, and behind the suspended lees and the reduction and (more rarely) the oak, it is apparent that this is a very special vintage in the making. Long after the sun set over the Côte d'Or, we continued tasting, looking at bottled 2017s and 2018s, wines that confirmed all the promise they showed during their élevage.

The 2019 Chassagne-Montrachet Les Chaumées 1er Cru is quite reticent on the nose with lemon thyme and light blackcurrant leaf aromas. Lovely definition, fresh and focused with a touch of sour lemon, the lemongrass note on the finish extends its persistency. Superb.

Two weeks prior to my visit chez Lamy in Saint-Aubin, I heard that Olivier had tested positive for Covid, fortunately asymptomatically. I must admit trepidation upon arriving, though he was in fine fettle and took the most precautions of any winemaker by relocating the tasting outside the barrel cellar. Tasting in freezing temperatures is not ideal and I began losing sensation in my fingers midway through the Premier Crus, but better to be safe. Lamy explained how poor flowering in spring predicated low yields around 25hl/ha, though there were exceptions to the rule such as the Saint-Aubin Les Princées that reached a respectable yield at 45hl/ha. The harvest started around 7 September with the Criots-Bâtard-Montrachet picked the following day. He was particularly effusive about the texture of his 2019s and the level of phenolics that he opined are better than in 2018. To prove that, he opened five 2018s and then, in what turned into a bit of a marathon tasting, a clutch of 2017s and randomly chosen bottles back to a 2002 Puligny Tremblots. For sure, Lamy’s 2019s are an exemplary showcase of Saint-Aubin’s terroirs, his white infused with compelling salinity and drive, occasionally with subtle earthy aromas that I often find accentuated with maturity. There is always an intellectual aspect to Lamy’s wines, not crowd pleasers, yet that is what can make them so compelling.

Notes of orange oil, white flowers and pear, complemented by hints of smoke and fresh bread, introduce the 2019 Chassagne-Montrachet 1er Cru Les Chaumées, a medium to full-bodied, satiny and precise wine that's bright and racy, with tangy acids and a chalky finish. This is a cuvée that really seems to have taken on another dimension in the last few vintages.
Sometimes I contemplate what I think might be the easiest way to make enemies in Burgundy: A Michelin Guide-style ranking, out of three stars, of the region's best domaines. Olivier Lamy would be one of three white wine producers in the Côte de Beaune to whom I would unquestionably award three stars. Last year, I wrote that I ran the risk of exhausting superlatives if I attempt to articulate just how much I admire these wines, and this year is no different. In 2019, yields were reduced by frost, averaging around 25 hectoliters per hectare, yet the wines aren't defined by it as they were, for example, in 2016, when an abundance of second- and third-generation grapes complicated the choice of harvest date. Concentrated and textural, with prodigious levels of dry extract, they will demand more patience than his superb 2018s, yet in the end I suspect they will prove even finer wines. As ever, given Lamy's cold cellars and his winemaking approach, the wines evolve slowly; this is far from the easiest tasting of my three months of visits, and I confess to succumbing to the venal sin of smugness at having left the afternoon empty when I witnessed two fellow critics arrive for our shared appointment fresh from six of seven preceding tastings. Attention to what is going on chez Lamy is liberally repaid, however, and behind the suspended lees and the reduction and (more rarely) the oak, it is apparent that this is a very special vintage in the making. Long after the sun set over the Côte d'Or, we continued tasting, looking at bottled 2017s and 2018s, wines that confirmed all the promise they showed during their élevage.

The 2019 Chassagne-Montrachet Les Chaumées 1er Cru is quite reticent on the nose with lemon thyme and light blackcurrant leaf aromas. Lovely definition, fresh and focused with a touch of sour lemon, the lemongrass note on the finish extends its persistency. Superb.

Two weeks prior to my visit chez Lamy in Saint-Aubin, I heard that Olivier had tested positive for Covid, fortunately asymptomatically. I must admit trepidation upon arriving, though he was in fine fettle and took the most precautions of any winemaker by relocating the tasting outside the barrel cellar. Tasting in freezing temperatures is not ideal and I began losing sensation in my fingers midway through the Premier Crus, but better to be safe. Lamy explained how poor flowering in spring predicated low yields around 25hl/ha, though there were exceptions to the rule such as the Saint-Aubin Les Princées that reached a respectable yield at 45hl/ha. The harvest started around 7 September with the Criots-Bâtard-Montrachet picked the following day. He was particularly effusive about the texture of his 2019s and the level of phenolics that he opined are better than in 2018. To prove that, he opened five 2018s and then, in what turned into a bit of a marathon tasting, a clutch of 2017s and randomly chosen bottles back to a 2002 Puligny Tremblots. For sure, Lamy’s 2019s are an exemplary showcase of Saint-Aubin’s terroirs, his white infused with compelling salinity and drive, occasionally with subtle earthy aromas that I often find accentuated with maturity. There is always an intellectual aspect to Lamy’s wines, not crowd pleasers, yet that is what can make them so compelling.

Domaine Hubert Lamy behoort tot de absolute referenties van Saint-Aubin en staat bekend om zijn precieze, kalkgedreven witte Bourgognes met enorme spanning en lengte.
Domaine Hubert Lamy in Saint-Aubin
Het domein is gevestigd in Saint-Aubin, in de Côte de Beaune in Bourgogne. Lange tijd stond Saint-Aubin in de schaduw van Puligny-Montrachet en Chassagne-Montrachet, maar producenten als Hubert Lamy hebben dat beeld volledig veranderd. De wijngaarden liggen hoog op de hellingen, met veel kalksteen in de bodem. Die combinatie van hoogte, expositie en arme kalkbodems zorgt voor frisse zuren, lage opbrengsten en wijnen met uitgesproken mineraliteit.
De percelen van het domein liggen verspreid over verschillende climats, waaronder meerdere Premier Cru-wijngaarden. De hogere ligging betekent vaak koelere nachten en een langere rijpingsperiode. Dat zie je terug in de stijl: energiek, strak en zeer precies.
Geschiedenis en visie
Domaine Hubert Lamy werd opgericht in 1973. Waar het domein aanvankelijk relatief klein was, groeide het in de loop der jaren uit tot een van de belangrijkste namen van Saint-Aubin. Tegenwoordig staat Olivier Lamy aan het roer. Onder zijn leiding is de focus nog sterker komen te liggen op terroirexpressie en detail.
Olivier Lamy werkt met hoge plantdichtheden en zeer lage opbrengsten. Oude stokken worden gekoesterd en waar mogelijk wordt gewerkt met massale selectie in plaats van klonen. Elk perceel wordt afzonderlijk gevinifieerd, zodat verschillen in bodem en expositie volledig zichtbaar blijven in het glas.
Druivenrassen en werkwijze
Chardonnay vormt de kern van het domein. Daarnaast produceert Hubert Lamy ook Pinot Noir, maar internationaal is het vooral de witte lijn die de reputatie heeft gevestigd.
De vinificatie is gericht op precisie en spanning. Kenmerkend zijn:
- Lage rendementen per hectare
- Vergisting met natuurlijke gisten
- Lange rijping op de lies
- Beperkt gebruik van nieuw hout
- Langzame, gecontroleerde opvoeding
De houtinvloed is altijd ondersteunend en nooit dominant. Het doel is niet rijkdom of breedte, maar structuur, lengte en een duidelijke afdruk van de kalkbodem. In jeugd kunnen de wijnen een subtiele reductieve toets tonen, die met lucht en rijping prachtig integreert.
Stijl en karakter van de wijnen
De witte wijnen van Hubert Lamy staan bekend om hun lineaire opbouw. Geen ronde, boterige stijl, maar spanning en definitie. Typische aroma’s zijn citrus, limoen, groene appel en witte bloemen. Daarnaast vaak een duidelijke krijt- of natte steen indruk, die rechtstreeks verwijst naar de kalkrijke bodems.
In de mond zijn de wijnen strak en energiek, met hoge natuurlijke zuren en een lange, ziltige afdronk. De betere Premier Crus combineren die spanning met concentratie en diepgang. In sterke jaargangen hebben ze moeiteloos een bewaarpotentieel van 10 tot 20 jaar, soms zelfs langer.
Ook de Pinot Noir-wijnen tonen een verfijnde stijl. Geen zware extractie, maar transparantie, rood fruit en frisse structuur. Ze passen bij de filosofie van het domein: precisie boven kracht.
Waarom Hubert Lamy zo gewild is
De combinatie van lage opbrengsten, beperkte productie en stijgende internationale vraag maakt de wijnen van Hubert Lamy schaars. Vooral de Premier Cru-percelen zijn vaak snel uitverkocht. In de internationale pers worden de wijnen regelmatig zeer hoog beoordeeld, met nadruk op hun zuiverheid en bewaarpotentieel.
Voor liefhebbers van Puligny-Montrachet of Chassagne-Montrachet die zoeken naar spanning, kalk en detail, biedt Hubert Lamy een serieus alternatief met een eigen signatuur. Saint-Aubin is dankzij dit domein uitgegroeid tot een appellatie die niet langer als bijrol wordt gezien.
