The special climate of Elgin allows Paul Cluver to make wines with a special acid balance and an almost European style. The reference for Chardonnay wines from South Africa is Paul Cluver. The Seven Flags Chardonnay is the first release from 27-year-old vines, some of the oldest in South Africa. The vines are clones of Burgundy vines from Dijon. The 7 Flags from Paul Cluver has a bright, mineral-driven bouquet with a hint of sea salt and limestone. The palate is very well balanced and very Burgundy-like, more Chassagne than Meursault with a very long, slightly spicy finish with the 30% new oak deftly integrated. 2014 was the debut of this beautiful wine and has been very highly rated every year This wine has a great drinking window of 2025-2033+ Fish, poultry, pork and game dishes go beautifully with this wine. It goes particularly well with creamy pasta and salmon dishes. The good acidity and balance between wood and fruit keeps the wine from being too rich and therefore also great without food.

WINE-FOOD SUGGESTIONS:

    • Grilled chicken fillet with lemon and tarragon
The fresh acids and subtle wood tones of the wine go well with the juicy chicken and the refined spiciness of tarragon.

    • Pasta with salmon, cream sauce and dill
The creamy sauce and soft texture of the salmon are beautifully balanced by the fresh tension and roundness of the Chardonnay.

    • Salad with grilled peach, burrata and pine nuts
The fruity and creamy elements of the dish complement the ripe stone fruit and light toastiness of the wine perfectly.

    • Risotto with green asparagus and Parmesan cheese
The creaminess of the risotto and the fresh green character of the asparagus enhance the depth and elegance of the wine.

    • Fried sole with beurre noisette and capers
The nutty butter and saltiness of capers are beautifully carried by the soft wood tones and freshness of the Chardonnay.

    • Scallops with parsnip cream and citrus butter foam
The sweetness of the scallops, the creamy parsnip and the citrus accent find a perfect match in the richness and refinement of the wine.

Paul Cluver is located in Elgin, one of the coolest regions of South Africa. Paul Clüver is originally an apple company, but since 1986, on the initiative of owner Paul Clüver, also a wine company. Due to its location in a very cool area, directly by the sea, wines are made here with a remarkable finesse and freshness. Third generation starts with wine. The estate of the Clüver family, De Rust, was acquired in 1896 by the grandfather of the current owner, Paul Clüver.

Soil samples were taken during the 1980s, which showed that viticulture was perfectly possible here. It was then decided to replace part of the apple orchards with vineyards. It was initially agreed to process the grapes into wine on the Nederburg Estate, one of the
most famous houses of the Cape. The first grapes were planted in 1986: Sauvigon Blanc, Chardonnay, Gewürztraminer and Weisser Riesling. The latter grape has been planted to make sweet wines with the help of noble rot. The estate's wines are now entirely made in-house to give them their own character. Andries Burger, the winemaker of Paul Clüver, is responsible. Dr. Paul Clüver himself is still involved in his own profession: neurosurgery.
