In 1962, 19 winemakers, determined to showcase the high potential of Salento wines, founded "Cantine San Marzano." From the silvery sea of olive trees, the white stones of midday, the luminous secrets woven into lace, and the languidly inviting Baroque palaces, emerges Edda, a "feminine" wine with a mineral, timeless temperament, an ineffable fruit in a land of charm. Although Puglia is primarily the domain of Italian grape varieties, Chardonnay also thrives here. This is partly due to the cool sea breeze that blows through the vineyards at night. This allows the grapes to develop the necessary freshness, ensuring the desired acidity and a good balance between fruit, acidity, and alcohol.

The San Marzano EDDA Bianco Salento is predominantly Chardonnay with a touch of two unique indigenous grapes: Moscatello Selvatico and Fiano. Moscatello Selvatico is a spontaneous cross between Moscato di Alessandria and Bombino Bianco and is very rare. Due to its low yields, it is not popular with winemakers, but its flavor is spectacular. Fiano is originally from Southern Italy. It barely survived the phylloxera plague but is now gaining popularity due to its aromatic qualities. The vineyards are located near the sea, approximately 100 meters above sea level. Cold skin maceration and alcoholic fermentation take place in French oak barrels. After alcoholic fermentation, the wine is aged for another four months "sur lie" with weekly bâtonnage.

In the glass, the EDDA Bianco is a straw-yellow color with golden reflections; soft citrus fruits and delicate floral vanilla notes fill the nose. The palate is generous, elegant, fresh, delicate, and minerally. The finish is long and smooth with a hint of green herbs. The wine pairs well with fish and shellfish appetizers and entrées, summer salads with chicken or shrimp. But it is especially wonderful with creamy cheeses.

1. Linguine with lemon cream sauce, zucchini and Parmesan cheese
The crisp acidity and creamy texture of the EDDA Bianco perfectly complement the soft cream sauce and the light flavor of zucchini. The lemon beautifully enhances the wine's citrus aroma, while the Parmesan complements the wine's full body.

2. Grilled chicken fillet with tarragon and a white wine beurre blanc
The wine's full structure and light oak notes complement the rich, buttery sauce. Tarragon enhances the wine's floral character, while the grilled chicken provides a subtle base without overpowering the wine.

3. Baked sea bass with fennel and orange segments
The elegant combination of anise (from fennel) and citrus (from orange) brings out the aromatic and fruity character of the EDDA. The soft texture of the fish leaves room for the wine to shine, without competition.

4. Ravioli filled with ricotta and sage, served with melted butter and almond shavings
The butter and nutty notes enhance the wine's creaminess, while the sage adds a spicy note that contrasts beautifully with the EDDA's floral notes. The ricotta creates a soft, silky texture, complementing the wine's full mouthfeel.

5. Langoustine tartare with avocado, lime and basil oil
The langoustine's delicate sweetness and the avocado's creamy character combine beautifully with the wine's structure and fresh acidity. Lime and basil enhance the EDDA's aromatic profile and add further layers.

6. Truffle risotto with white asparagus and mascarpone
The creamy risotto and mascarpone blend seamlessly with the wine's soft, oak-aged notes. The subtle bitterness of the asparagus and the earthy character of the truffle add a deep, luxurious dimension that harmonizes with the complexity of the EDDA Bianco.

In 1962, 19 winegrowers from San Marzano joined forces to create "Cantine San Marzano". Today, this cooperative has more than 1200 growers and uses modern and technologically advanced installations without compromising the very old wine tradition of Puglia. San Marzano is located in Puglia, in the heart of the acclaimed DOC "Primitivo di Manduria", between two seas (Ionian and Adriatic).

The provinces of Taranto and Brindisi offer a landscape where vineyards and olive trees grow side by side on a red substrate. This soil and the Mediterranean terroir play an essential role in the production of high-quality wines. The climate is extreme, with difficult conditions: drought, frost, Sirocco wind. Yet these passionate winemakers ensure that even grapes from the oldest vineyards produce full-bodied and elegant wines. Respect for the traditions of Puglia and passion for wine are paramount, but go hand in hand with technological developments and clever marketing. The modern wines of San Marzano are now extremely popular in Italian wine bars. The San Marzano label is their premium line, which even appears on the table in Michelin restaurants.

Using modern vinification techniques, San Marzano produces elegant and clean wines that pay tribute to the ancient Apulian winemaking traditions. This fusion of time-honored tradition, passion and contemporary craftsmanship allows the production of wines with distinctive varietal characteristics that reflect the essence of the local terroir. The team of winemakers is built to create the idiosyncratic and innovative style that makes San Marzano recognizable from the first sip. Caterina Bellanova and Davide Ragusa were born and raised in Puglia: Caterina represents the exquisite touch essential to make iconic wines, Davide is a young and talented winemaker, he studied oenology in Florence and developed his practical skills during several harvests, including in Abroad.

The strength of San Marzano lies in its versatility. However, she does have some hobbyhorses. She is a real star in the Primitivo from Di Manduria. San Marzano is also the right address for the wine drinker who is looking for depth and complexity. How about the San Marzano Collezione Cinquanta. This is a complex red wine that unites all the beauty of Salento, part of Puglia. But the real winner is the Sessantanni Primitivo di Manduria, a real top wine that the whole world has fallen in love with. It was not for nothing that this powerhouse received no less than 98 points from Luca Maroni, who is considered the Italian counterpart of Robert Parker.
