Leonildo Pieropan is considered the godfather of Soave. The wines are made from Garganega and Trebbiano grapes grown in the hills surrounding the town of Soave. The special La Rocca cuvée, made from late-harvest grapes, is aged in French oak and has won numerous international awards. Andrea and Dario continue their father's work and, in addition to the renowned Soave, also produce red wines of exceptional quality. After studying regional grape varieties, the terroir, and the microclimate, the company acquired vineyards and real estate in Cellore d'Ilasi (Valpolicella and Amarone) in 1999. From Corvina, Corvinone, Rondinella, and Croatina Veronese, they now produce a beautiful Valpolicella, Ruberpan, and a complex and rich Amarone. The former 15th-century monastery on the estate, Villa Cipolla, is currently being restored and converted into a luxury agriturismo.
The Calvarino vineyard of the Azienda Agricola Pieropan winery is located in the heart of the Soave Classico region and has formed the core of the Pieropan family estate since its purchase in 1900. The soil here dates back to the Tertiary period and is rich in clay and basalt, giving the wine a savory, mineral character. The name Calvarino derives from "the little cavalry" to indicate the difficulty of cultivating the often very steep vineyards here. First produced in 1971, Calvarino wine is considered the most traditional and characteristic wine from the Soave region. The nose is fresh, with hints of (elderflower) blossom, lemon, and cherry. On the palate, the wine is dry and minerally with wonderful length and finesse.
The grapes are hand-harvested in two stages, with strict selection for the right ripeness. In the vinification cellar, the grapes are destemmed and then pressed. Subsequently, a temperature-controlled (14 to 18°C) spontaneous alcoholic fermentation with wild yeasts (native to the grapes) takes place in stainless steel tanks for two weeks. After this, the wine is transferred to concrete vats for malolactic fermentation and aging on its fine lees. After one year, the wine is blended and bottled after light filtration. This entire process follows strict biodynamic rules and regulations.
In the glass, the Pieropan Soave Classico Calvarino has a bright, sparkling straw yellow color. The nose reveals aromas of citrus, peach, orange peel, and jasmine. The palate reveals aromas of lemongrass, verbena, a hint of honey, and walnut. These are accompanied by a long, minerally finish with soft, fresh acidity.
