Leonildo Pieropan is regarded as the godfather of Soave. The wines are made from Garganega and Trebbiano grapes from the hills surrounding the town of Soave. The special cuvée La Rocca, made from late-harvested grapes, is aged in French oak and has won many international awards. Andrea and Dario continue their father's work and, alongside the famous Soave, also produce red wines of exceptional quality. After studying regional grape varieties, the terroir, and the microclimate, the company purchased vineyards and real estate in Cellore d'Ilasi (Valpolicella and Amarone) in 1999. A beautiful Valpolicella, Ruberpan, and a complex and rich Amarone are now produced from Corvina, Corvinone, Rondinella, and Croatina Veronese. The old 15th-century monastery on the estate, Villa Cipolla, is currently being restored and converted into a luxury agriturismo.

The La Rocca Soave Classico is Pieropan's flagship model. The Garganega grapes are harvested (very) late to achieve an optimal degree of ripeness. Gentle pneumatic pressing separates the juices from the skins. After a short settling period of 2 days, the juices are transferred, partly to temperature-controlled stainless steel tanks and partly to 500-liter barrels. At 20°C, the juices ferment very slowly. The young wine is given time to develop and is then aged in wood for 1 year: 60% remains in the 500-liter barrels, the remainder in large barrels with a capacity of 2,000 liters. After blending and bottling, the wine rests in the bottle for another 4 months.

In the glass, Pieropan's La Rocca Soave Classico is clear and sparkling with an intense (light) yellow color. It is a characterful wine with aromas of exotic fruit and nuts. Soft and captivating on the palate, with notes of citrus fruits, spices, and vanilla. This Soave is an ideal accompaniment to firm and flavorful fish and shellfish (lobster, crab). Also recommended with white meat, rabbit, and chicken in light sauces.
