Description
The Fundamental Chardonnay may say "Central Coast" on the label, but in reality, this vintage is made from 100% Santa Barbara fruit. Crafted by renowned winemaker Joey Tensley and his wife, Jennifer Tensley. The philosophy behind Fundamental Wines is simple: to deliver a wine that is fundamentally solid and straightforward, yet excels in quality and accessibility—for us, it's a California white wine of exceptional value for its price. Joey Tensley, who founded his original brand, Tensley Wines, in 1998 and has since impressively grown both the brand and its reputation. This Chardonnay has been praised by wine connoisseurs and critics alike and exemplifies Tensley's craftsmanship and dedication to quality.
Winemaker Notes: “With one of the coolest vintages on record. This wine shows a distinct minerality on the nose. Once you taste it you will get loads of traditional chardonnay flavors like apple, lemon, tropical fruits and a pinch of buttery oak. It's such a fun wine to drink because it covers all of the bases of texture and acidity.”
FACT: The wine is stored in our climate-controlled Wine Warehouse, and if you pick it up, you'll often receive a nice discount . You'll see your discount immediately when you select "Pick up" at checkout. We're located in Dordrecht, just off the A16 motorway, with ample parking. Click here for our address.

1. Roasted chicken with garlic, lemon and thyme
The succulent chicken and roasted flavors complement the wine's oak-aged character. Lemon provides freshness and a bridge to the tropical fruit in the glass, while thyme enhances the aromatic depth.
2. Tagliatelle with creamy mushroom sauce
The creamy sauce complements the wine's buttery texture perfectly. Mushrooms add an earthy layer that balances beautifully with the ripe fruit and oak notes.
3. Corn chicken with polenta and roasted peppers
The sweet notes of corn-fed chicken and bell pepper enhance the wine's ripe character. Polenta adds creaminess, and the whole thing remains subtle enough to let the wine shine.
4. Baked salmon with honey-mustard sauce and green asparagus
The salmon's fatty texture complements the wine's roundness. Honey and mustard lend a sweet-spicy twist that complements the fruit and soft acidity, while asparagus adds a fresh touch.
5. Roasted cauliflower with curry and coconut
The warm spices and soft texture of cauliflower complement the wine's full-bodied style. Coconut adds an exotic, soft note that harmonizes beautifully with the tropical fruit.
6. Crayfish ravioli with vanilla butter and chives
The rich, soft texture of the lobster and the delicate vanilla notes from the sauce perfectly reflect the wine's maturity and oak. Chives provide a fresh, spicy contrast.

The 2021 Fundamental Chardonnay features quince, apricot, green herbs and baker’s yeast scents. The medium-bodied palate balances savoury beeswax and apple character with bright, citrusy acidity and finishes with a touch of texture that will help this pair with dishes from pasta to chicken.

Made from 100% Santa Barbara fruit, this vintage. Fundamental is Joey Tensley’s range of quality, value wines, intended to’ over-deliver at every level’. As tense as the white Rhône blend on the nose, that glorious creaminess and come-hither quality of California Chardonnay on the palate. It’s really charming and very good value.
