Description
Brothers Didier and Denis (and his son Bruno) Larue have their domaine in Gamay, a hamlet northeast of Saint-Aubin. The vineyards are therefore 'on the good side' of Saint-Aubin, namely on the side of Chassagne and Puligny Montrachet. In addition to a lot of Saint-Aubin, the domaine also produces wines from Chassagne and Puligny Montrachet, appellations that appeal more to the imagination, because the best white wines in the world are made there. The family has owned vineyards for several generations, but Didier and Denis decided to bottle them themselves. In a short time, they have acquired a very good reputation with an honest, pure, teroir-oriented style at relatively good prices. The vineyard management is conscientious: the vines are pruned short and the harvest is green, so that the yield per hectare is low. Few pesticides are used and the grapes are picked by hand.
The terroir is located above the premier cru En Montceau. These parcels, facing south-west at an altitude of 340 metres, are situated on a hilltop of white marl soil, mainly limestone. These Chardonnay vines were planted in 1990 and 2011, at a density of 10,000 vines/ha and covering an area of 37are22 (3722 m²). The vines are pruned in a simple Guyot style and then de-budded in the spring. The vines are rigorously pruned. The soil is worked mechanically using a high-splay tractor (hilling up, de-rooting, light raking of the surface). After careful control of ripeness, the grapes are harvested by hand and brought to the winery in small crates. The grapes are lightly crushed. The juice flows from a pneumatic press and is then settled. Barreling is done by gravity and the must ferments in oak barrels. The cuvée matures entirely in oak barrels, 20% of which are renewed each year. After 10 months of maturation on fine lees, the wine is assembled, refined and bottled after light filtration. The Saint-Aubin premier cru Les Champlots has a clear, almost transparent appearance. The nose shows lime blossom, followed by remarkably extended notes of white flowers. The palate is as sharply defined as Burgundian limestone, with the wine expressing the cool freshness of its terroir. This cuvée produces around 2,500 bottles. You can drink the Chamblot 1er cru young, but it will improve even more after 3 to 7 years and of course not too cold (11° to 13°)

Baked salmon with lemon and dill
The creamy texture of the fish matches the light woody notes of the wine, while the fresh lemon juice emphasizes the acidity of the Chardonnay. Dill enhances the elegance of the floral aromas in the wine.
Chicken fillet with creamy mustard sauce
The fullness of the sauce matches the light wood use and the round texture of the wine. The mustard adds a subtle spiciness that contrasts with the ripe fruit.
Pasta with shrimps, garlic and parsley
The salty and juicy structure of the shrimp is nicely balanced by the minerality of the wine. The garlic and herbs give depth, without overpowering the wine.
Grilled zucchini with lemon and parmesan cheese
A simple, vegetarian combination. The umami of Parmesan and the freshness of lemon enhance the savoury and mineral elements of the wine respectively.
Ravioli with ricotta and spinach in butter sauce
The creaminess of the filling and the butter sauce complement the softness and roundness of the wine perfectly, while the green vegetables provide a fresh counterbalance.
