Domaine Frantz Chagnoleau is a small estate run by two talented winemakers, Frantz Chagnoleau and his wife Caroline Gon (winemaker at Héritiers du Comte Lafon). Frantz has a degree in oenology, having gained his experience working for Olivier Merlin in the Mâconnais. Caroline has two degrees in agricultural engineering and oenology; she worked at Newton Vineyards in Napa Valley before returning to France to work with Dominique Lafon as head winemaker for Héritiers du Comte Lafon. Having Dominique as a friend and mentor has had a profound influence on the pair, evident in a line-up of pure, terroir-driven Mâconnais wines.

Since 2013, all vineyards have been certified organic. Like Lafon, this dynamic duo believes in minimal intervention, including using only indigenous yeast, as the best way to express the nuances of each unique terroir. Aging takes place in largely large, used French oak, with harvesting done entirely by hand, plot by plot, allowing each vine to achieve the right balance of sugar and acidity before being picked. This dynamic duo are one of the most talented teams in all of Burgundy, farming the old-fashioned way and making micro-quantities of single vineyard white Burgundy from some of the best Chardonnay terroirs in the world.

The Saint-Véran À la Côte comes from a specific vineyard called "À la Côte" The small vineyard is only 0.25 hectares with vines of more than 50 years old and is located at an altitude of 400 meters where the (cool) wind often has free play. The soil has a top layer of red clay with limestone on a deeper rocky subsoil. After careful pressing, the vinification takes place with natural yeasts and without further intervention in used demi-muids, barrels of 500 liters.
The Saint-Véran A La Côte shows itself deep golden yellow in colour and has a full perfume of peaches, white flowers, honey and fresh pear, medium to full, satiny, layered and very lively with bright acidity and an exciting salty finish.

  • Grilled zucchini with lemon and feta
The fresh citrus and creamy saltiness of the feta complement the fresh and mineral profile of the wine.

  • Baked chicken fillet with tarragon and lemon cream sauce
The light creaminess and spiciness of the dish are beautifully supported by the refined acidity of the wine.

  • Fennel, apple and walnut salad
The fresh and slightly aniseed flavours of the salad enhance the floral and fruity notes in the wine.

  • Cod with leek and white wine sauce
The delicate structure of the fish and the soft vegetable flavours combine well with the lively tension of the Saint-Véran.

  • Scallops with a lemon and chive beurre blanc
The soft texture of the scallops and the fresh sauce allow the minerality and citrus character of the wine to shine.

  • Risotto with lobster, fennel and orange zest
The creaminess of the risotto and the aromatic character of the fennel and citrus perfectly complement the depth and elegance of this Burgundy.

Domaine Frantz Chagnoleau is located in the picturesque village of Pierreclos and covers (only) 6.8ha. Frantz is undoubtedly one of the great talents of the Mâconnais. His wife is a manager at Héritiers Du Comte Lafon! In terms of wine, it is already a top couple!
