Produced from the vineyards surrounding the medieval castle of Castello della Sala, San Giovanni is a blend of indigenous varieties, Grechetto, Procanico with Pinot Blanc and Viognier; a new interpretation of the Orvieto Classico appellation. The first vintage of Castello della Sala's Orvieto Classico was 1990 and is a contemporary rendition of Orvieto Classico.

After the plus the grapes were taken to the cellar and each grape variety was fermented separately to enhance their unique characteristics. A portion of the must was cold macerated on the skins for about 6 hours at a controlled temperature of 10°C (50°F) and then blended with the other portion which was only gently pressed to obtain maximum extraction. The blended must was then transferred to temperature-controlled stainless steel tanks where alcoholic fermentation took place at a temperature of 16°C. The wine was aged on the lees (sur lie) for several months until the final blending and bottling to enhance its structure, elegance and minerality.

The Antinori Castello Della Sala San Giovanni Della Sala Classico Superiore has a pale straw yellow color with green highlights. The nose offers pleasant notes of tropical fruit that merge with light mineral sensations. In the mouth, excellent balance between structure and freshness with a good savory character and pleasant persistence of yellow fruit.

Marquis Piero Antinori is in charge and is assisted by his three daughters: Albiera, Allegra and Alessia. Funny those three A's. In 1180, Ugo and Antinori di Rinuccino were officially named as owners of Castello di Combiate; a century later, the family who had moved to Florence were included in the register of the silk trade cooperative. In 1385, Giovanni di Piero, an indirect descendant, entered the wine guild as an apprentice. Since then, the wine-growing tradition of the Antinori family has been continuous. With the establishment of the Marchesi Antinori winery, the peak was reached in 1895 and already in 1898 the winery was built in San Casciano Val di Pesa, which is still the center of the widely branched group of properties in all major cultivation areas of Tuscany, Umbria. , Piemonte (since the early 90s through the purchase of the wine cellar Prunotto), Apulia and even California. The traditional house participating in the modern Tuscan wine-growing revolution owes much of its prestige to its former chief vinologist Giacomo Tachis, who produced exceptional wines such as Sassicaia, Tignanello (especially sangiovese), Solaia (especially cabernet) and many others. the other was responsible.
