Description
Muffato della Sala is produced with grapes with "noble rot", harvested in late October and early November to allow the morning mists of Botrytis Cinerea or noble rot to develop on the grape berries. This type of fungus concentrates the water of the crop, the sugars and the aromas, giving the Muffato della Sala a harmonious and unmistakable scent. The first year produced was the 1987 and consisted of the mix of varieties such as Sauvignon Blanc (50%); Grechetto (30%) and Drupeggio (20%). The composition of the blend has varied over the years and has now reached its definitive results. Muffato della Sala is a fascinating wine, an expression, in small quantities, of the nature of a unique terroir.
The grapes come from the vineyards of Castello della Sala, located between 200-450 meters above sea level on clay-rich soils with many sea fossils and especially oyster shells (from the period when this was still a marine area). The grapes from the vineyards are picked by hand and only the right grapes with noble rot are picked and the rest are left hanging, so sometimes 5-6 are harvested from a vine and this makes the process of a good dessert wine very labor-intensive. After picking, the bunches of grapes go for a further selection on a conveyor belt and a light pressing without destemming followed. After pressing, the must ferments for eighteen months at a temperature of about 17 ° Celsius. The wine obtained, still sweet, is then given further aging in Allier & Tronçais oak barriques where it ages for six months and then matures in stainless steel tanks for a period of two years.
The Muffato della Sala has a bright and intense golden yellow color. The nose is delicate and elegant with aromas of ripe fruit, apricots and peach, harmoniously blended with floral hints, citrus fruits and slightly salty sensations. The taste confirms and fully brings out the sensations of the nose, showing a remarkable balance between freshness and sweetness with a long finish and aftertaste.

The 2014 Muffato della Sala (with 30,000 500-milliliter bottles produced) is a sweet blend of Sauvignon Blanc, Grechetto, Sémillon, Traminer and Riesling. This is a precious wine that is only made when the correct humid conditions are met. It was not produced in the dry 2012 vintage, nor was it made in the scorching hot 2017 vintage. In terms of this vintage, I'm told the Grechetto had no problem getting Botrytis cinerea. The Traminer and Riesling were not affected by so-called noble rot, but the grapes were concentrated for extra sugar and flavor. This vintage is certainly thinner compared to past editions. It offers more shallow flavor intensity with aromas that are fragrant and bright, albeit less intense overall. This wine needs a few more years (maybe five) to flesh out and gain in volume.

In 1180, Ugo and Antinori di Rinuccino were officially named as owners of Castello di Combiate; a century later, the family who had moved to Florence were included in the register of the silk trade cooperative. In 1385, Giovanni di Piero, an indirect descendant, entered the wine guild as an apprentice. Since then, the wine-growing tradition of the Antinori family has been continuous. With the establishment of the Marchesi Antinori winery, the peak was reached in 1895 and already in 1898 the winery was built in San Casciano Val di Pesa, which is still the center of the widely branched group of properties in all major cultivation areas of Tuscany, Umbria. , Piemonte (since the early 90s through the purchase of the wine cellar Prunotto), Apulia and even California.
