Description
In the glass it has a beautiful straw yellow color with a complex fruity bouquet on the nose with hints of citrus, pineapple, pears and vanilla (from the wood). The taste is beautiful, full and with a clear character. Furthermore, hints of flowers can be discovered. This blend wine from Umbria is made from 85% Chardonnay and 15% Grechetto.
This super wine from Antinori comes from Umbria, which can be matched with a beautiful Burgundy. Complex due to the aging in wooden barrels. In the smell and taste the unity of vanilla, acacia flowers, citrus fruit and pear, followed by a full, creamy impression in the taste: unmistakably a Chardonnay. The Grechette grape provides original mineral notes. the aftertaste lasts very long. the wine is named after the family that owned Castello della Sala in the 14th century. Conti Della Cervara. The grapes for this beautiful white wine come from the 15 to 20 year old vineyards of the Castello della Sala domain. The vineyards are located at an altitude of between 200 and 400 meters. The soil is calcareous, full of marine fossils and clay. Immediately after picking, the grapes are cooled to ensure that they arrive in the press quite cold. The grapes are pressed and fermented separately. To obtain the best possible aroma, the peels are soaked in the must for approximately 8 hours. For further fermentation, the wine is placed in 225 liter French oak barriques for 15 days. Further maturation then takes place in wooden barriques for approximately 5 months. The blend is made before the wine is bottled. The wine then remains in the bottle in the estate's cellars for further maturation for another 10 months.

This is Marchesi Antinori's top white wine, and it comes from the region of Umbria. The Castello della Sala 2022 Cervaro della Sala is based on Chardonnay and has a small part of the local grape Grechetto in the blend. The nose opens to a reductive note of flint or matchstick, but it lifts quickly to reveal soft orchard fruit, white peach and minty apple. There are delicately applied toasted notes with a hint of pecan or macadamia nut. To finish, you also get salty mineral notes that underline the extremely vertical or lifted personality of the bouquet. Renzo Cotarella tells me that tweaks to winemaking in recent years have attempted "to slim down the wine and not make it any bigger." This was a hot vintage, but Cervaro della Sala remains true to its leaner and meaner blueprint. However, given its accessible personality, we could expect a shorter drinking window for the 2022s.

This is very aromatic and lifted with mineral, nougat, floral, and lightly cooked apples. Some flint and matchstick. Medium- to full-bodied with a fine phenolic and acid backbone that energizes the wine. Complex aftertaste with subtle fruit and pastry at the end. This will age beautifully but hard not to drink now.

The 2021 Cervaro della Sala comes to life in the glass with crushed stones, oyster shells and damp earth evolving into lemon oil, green apple and hints of chamomile. This is pure elegance, with silky, verging on creamy textures and brilliant acidity. A salty staining of minerality adds tremendous depth to baked apple and spice notes. It finishes crunchy and long with a citrus tinge as touches of custard and nectarine slowly fade. This is a dramatic Cervaro della Sala that possesses amazing balance. It will be fascinating to watch it mature over the coming years.

You can count the best Orvieto producers on one hand. Castello della Sala undoubtedly ranks among them. The level of quality and value this estate provides continues to surprise. Any lover of traditional Orvieto, but also Chardonnay and Sauvignon Blanc, owes it to themselves to explore the Castello della Sala portfolio. Estate Director Massimiliano Pasquini oversees 240 hectares of vines across a property of 600 hectares, which also includes a modern-day winery and the ancient barrel aging cellars beneath the castle itself. These cellars still host the winery's vast library of current and old vintages slowly refining in barrels. Castello della Sala’s vineyards span from 220-500 meters above sea level and are planted in a blend of clay and calcareous-based soils rich in fossil shells. The Cervaro della Sala and Bramìto della Sala continue to be huge standouts and a perfect example of the heights that Chardonnay can reach in this region.
Pasquini’s newest project, Nibio, is a varietal Chardonnay from vines planted in 2015 at 500 meters of elevation. That said, don’t pass up on the Conte della Vipera, a varietal Sauvignon Blanc, which didn’t perform as well in 2022 but is a wine I look forward to tasting each year.

Marquis Piero Antinori is in charge and is assisted by his three daughters: Albiera, Allegra and Alessia. Funny those three A's. In 1180, Ugo and Antinori di Rinuccino were officially named as owners of Castello di Combiate; a century later, the family who had moved to Florence were included in the register of the silk trade cooperative. In 1385, Giovanni di Piero, an indirect descendant, entered the wine guild as an apprentice. Since then, the wine-growing tradition of the Antinori family has been continuous. With the establishment of the Marchesi Antinori winery, the peak was reached in 1895 and already in 1898 the winery was built in San Casciano Val di Pesa, which is still the center of the widely branched group of properties in all major cultivation areas of Tuscany, Umbria. , Piemonte (since the early 90s through the purchase of the wine cellar Prunotto), Apulia and even California.
