Antinori's most popular white restaurant wine is this superb Chardonnay. Made in Burgundy style and also known as "Baby Cervaro."

This 100% Chardonnay from the renowned Super Tuscan producer Antinori is a golden-yellow wine with a bouquet of summer fruit and a pure Chardonnay character, with lovely hints of vanilla. The palate is soft, beautifully balanced, and has a refined structure. The vines (100% Chardonnay) are planted at an altitude of 200 to 400 meters. The soil is primarily clay with fossils. After harvest, the wine's first fermentation takes place in steel vats, at a controlled temperature of no more than 10°C. After a few hours of fermentation, the must and skins are placed in French oak barriques for further fermentation and aging. After 5-7 months, the wine is ready for bottling.

The name Bramito means "the roar of the stag in the Bronze Age." Cervo is the Italian word for stag. Cervara was the nickname of one of the Monaldeschi family members who ruled Castello della Sala around 1300.

In 1180, Ugo and Antinori di Rinuccino were officially named as owners of Castello di Combiate; a century later, the family who had moved to Florence were included in the register of the silk trade cooperative. In 1385, Giovanni di Piero, an indirect descendant, entered the wine guild as an apprentice. Since then, the wine-growing tradition of the Antinori family has been continuous. With the establishment of the Marchesi Antinori winery, the peak was reached in 1895 and already in 1898 the winery was built in San Casciano Val di Pesa, which is still the center of the widely branched group of properties in all major cultivation areas of Tuscany, Umbria. , Piemonte (since the early 90s through the purchase of the wine cellar Prunotto), Apulia and even California.
