In the glass this has a beautiful straw yellow color with a complex fruity bouquet in the nose where hints of citrus, pineapple, pears and vanilla (from the wood) can be discovered. The taste is beautiful, full and with a clear character. Furthermore, hints of flowers can be discovered. This blend wine from Umbria is made from 85% Chardonnay and 15% Grechetto.
From Umbria comes this super wine from Antinori, which can be compared to a beautiful Burgundy. Complex due to the storage in wooden barrels. In the smell and taste the unity of vanilla, acacia flowers, citrus fruit and pear followed by a full, creamy impression in the taste: unmistakably a Chardonnay. The Grechette grape provides an original mineral-like tones. The aftertaste lasts a very long time. The wine is named after the family that owned Castello della Sala in the 14th century. Conti Della Cervara. The grapes of this beautiful white wine come from the 15 to 20 year old vineyards of the Castello della Sala estate. The vineyards are located at an altitude between 200 and 400 meters. The soil is calcareous, full of fossils from the sea and clay. Immediately after picking, the grapes are cooled to ensure that they end up in the press quite cold. The grapes are pressed and fermented separately. In order to obtain the best possible aroma, the skins are soaked in the must for about 8 hours. For the further fermentation of the wine, it goes into 225-litre French oak barriques for 15 days. The further maturation then takes place for about 5 months in wooden barriques. Before the wine is bottled, the blend is made. The wine then remains in the bottle for further maturation for about 10 months in the cellars of the domain.

In 1180, Ugo and Antinori di Rinuccino were officially named as owners of Castello di Combiate; a century later, the family who had moved to Florence were included in the register of the silk trade cooperative. In 1385, Giovanni di Piero, an indirect descendant, entered the wine guild as an apprentice. Since then, the wine-growing tradition of the Antinori family has been continuous. With the establishment of the Marchesi Antinori winery, the peak was reached in 1895 and already in 1898 the winery was built in San Casciano Val di Pesa, which is still the center of the widely branched group of properties in all major cultivation areas of Tuscany, Umbria. , Piemonte (since the early 90s through the purchase of the wine cellar Prunotto), Apulia and even California. The traditional house participating in the modern Tuscan wine-growing revolution owes much of its prestige to its former chief vinologist Giacomo Tachis, who produced exceptional wines such as Sassicaia, Tignanello (especially sangiovese), Solaia (especially cabernet) and many others. the other was responsible.
