2016 Château Pavie Premier Grand Cru Classé Saint-Emilion
This Saint-Emilion from Château Pavie is very rich, concentrated and ripe. The wine is a blend of 60% Merlot and 40% Cabernet Sauvignon. Mineral tones and an exceptional purity of fruit are reflected in the wine. You can only find this in the world's best wines. A particularly complex bouquet with dark fruit, truffle, coffee, cocoa, minerality and light smokiness. Impressive in taste. Impressive with power and elegance, with lush fruit, a firm but fine structure and the intensity of ripe fruit and spiciness. Finally, you will be rewarded with a huge final. Already beautiful, but our advice: put it in the wine cellar. This wine develops for decades. The 2015 volume was already rated very high, but the 2016 received the magical and maximum 100/100 Parker points.

The vineyard of Château Pavie is 42 hectares. It is a large entity, but contains various terroirs, each with its own microclimate. Château Pavie is often one of the last wineries to complete the harvest. They work responsibly: 70% of the vineyard is now treated organically, they strive for 100%.
Today, Gerard Perse is the man in charge. A self-made man and a millionaire from Paris. The son of a painter takes over a small grocery store in 1976 in a suburb and then achieves huge successes with franchise supermarkets for Champion (Carrefour). Until he only wants to be busy with wine. In 1998, after purchasing a few other wineries, he bought Château Pavie. In the region, he is seen as a denier of Saint-Emilion wines by the techniques he applied, for example early cutting of unripe bunches of grapes to limit production and increase quality. Considered at the time an unheard of waste, today almost everyone does it. Due to the success of his wines, his reputation has improved a lot. The 2016 Pavie a blend of 60% Merlot and 40% Cabernet Franc. Very deep purple-black in color, it needs a little coaxing to begin, slowly unfurling to reveal a fragrant perfume of violets, chocolate-covered cherries, crushed blueberries and eucalyptus over a core of preserved plums, kirsch, black raspberries and crème de cassis plus hints of licorice and chargrilled meat. Full-bodied and built like a brick house, it has a solid foundation of firm, super ripe, grainy tannins and seamless freshness interknit with the black fruit preserves and minerally layers, finishing very long and very decadent. Superb!
