The Arômes de Pavie is the 2nd wine of Chateau Pavie and is a blend of 65% merlot, 18% cabernet franc and 17% cabernet sauvignon. Beautiful aromas of blackberries, blue fruit, dark chocolate and black truffle that continue into a full bodied wine in the mouth with the character of crushed stone, fruit and black olives. Layered with firm tannins and serious aromas.
About the winery Château Pav ie
The vineyard of Château Pavie is 42 hectares. It is a large entity, but contains different terroirs, each with its own microclimate. Château Pavie is often one of the last wineries to complete the harvest. They work responsibly: 70% of the vineyard is now treated organically, they aim for 100%. Today, Gerard Perse is the man in charge. A self-made man and millionaire from Paris. The son of a painter, he took over a small grocery store in a suburb in 1976 and then achieved enormous success with franchise supermarkets for Champion (Carrefour). Until he only wanted to do wine. In 1998, after having bought a few other wineries, he bought Château Pavie. In the region, he is seen as a renouncer of Saint-Émilion wines because of the techniques he used, such as the early cutting of unripe bunches of grapes to limit production and increase quality. Considered an unheard-of waste at the time, today almost everyone does it. The success of his wines has improved his reputation a lot. Not only Parker, but also other international wine critics give the highest scores. And wine with a story.

The 2018 Arômes de Pavie is made up of 65% Merlot, 18% Cabernet Franc and 17% Cabernet Sauvignon. The wine has a 3.56 pH and 14.42% alcohol. Deep garnet-purple colored, it comes barreling out of the glass with powerful scents of stewed black cherries, mulberries and plum preserves, plus suggestions of hoisin, chocolate box, anise and underbrush with a touch of dried mint. The full-bodied palate is densely packed with ripe, concentrated black fruits and loads of savory accents, framed by rounded tannins and superb freshness, finishing long and beautifully layered.

The 2018 Arômes de Pavie is a gorgeous, sexy wine. Floral, silky and impeccable, the 2018 is impressive from the very first taste. The purity of the flavors is striking. Over the last few years Pavie has really upped their game with Arômes. The 2018 might be the best yet. Nuanced floral notes add the closing shades of complexity to this gracious, exquisite Saint-Émilion. Above all else, the Arômes de Pavie is absolutely delicious.

This set of wines from Gérard and Chantal Perse and their family is full of highlights. More importantly, though, it was great to see Gérard Perse in good shape following a serious illness. Although understandably a bit slowed down at the moment, Perse showed all of the same boyish enthusiasm coupled with unrelenting passion that have elevated his estates to the top of the pack in Bordeaux. This year I was especially impressed with the quality of the Arômes de Pavie, the sensuality of Bellevue Mondotte and the completeness of the flagship Pavie.
