History of Merryvale Vineyards and the Profile Series
Merryvale Vineyards is located in the heart of St. Helena, Napa Valley. The winery, run by the Schlatter family, is known for its elegant, terroir-driven wines. The Profile series is Merryvale's flagship wine, crafted from the estate's finest parcels, primarily on the slopes surrounding the winery. Since its first release in the late 1980s, Profile has become a household name among Napa lovers.
About the 2012 Profile Cabernet Sauvignon
The 2012 vintage is a blend of Cabernet Sauvignon with a small amount of Petit Verdot, sourced from the Profile Estate Vineyard. This hillside parcel with volcanic soil produces intensely structured grapes. The 2012 vintage is considered an excellent vintage in Napa Valley, with a long growing season and optimal ripening.
Vinification and maturation
After hand-harvesting, the grapes are vinified plot by plot. The wine is aged for 24 months in 100% new French oak from top cooperatives. This is followed by bottle aging in the cellar. This careful development results in a powerful wine with finesse, structure, and longevity. The wine is bottled unfined and unfiltered.
Color, smell and taste
The wine displays a deep ruby red color. The aroma reveals ripe cassis, black cherries, graphite, vanilla, spicy cedar, and a hint of mint. The palate is full and intense, with firm yet ripe tannins, a core of dark fruit, and a long, dry finish. The structure is classic Napa: powerful yet balanced and elegant. This wine is ready to drink now after decanting, but will continue to develop until at least 2032.

The 2016 Profile has come together beautifully since I tasted it last year. Super-ripe dark cherry, plum, chocolate, espresso, menthol, licorice and dark spice all run through this full-bodied, potent red. The 2016 is a big, overt wine, and yet it also has quite a bit of aromatic nuance and supporting structure.
