Description
Profile is a representation of the vineyard’s hillside location in Conn Valley. Composed of the best parcels produced on 25 sloping and rocky acres, it reflects the unique characteristics of each vintage through the diversity of clonal selections, rootstocks, soils, altitude, orientation and microclimates on the estate. The wine was vinified using classic Bordeaux techniques: wild yeast fermentation began after 5 days of cold maceration, reaching a peak temperature of 90F. After 15-21 days of maceration, the wines were drained directly into barrels to complete spontaneous malolactic fermentation. They aged the wine for 23 months in 80% new French oak barrels. The wine was bottled without fining or filtration.
The 2016 Merryvale Vineyards Cabernet Sauvignon Profile is a blend of 92% Cabernet Sauvignon and 8% Cabernet Franc that reflects the best of the Profile Estate in a fantastic vintage. Powerful and rich with a refined balance it delivers classic notes of berry, cassis and cocoa, complemented by hints of minerality. The tannins are supple and beautifully integrated, and the finish is long and rewarding. A savoury, seductive wine.

The 2016 Cabernet Sauvignon Profile is made up of 92% Cabernet Sauvignon and 8% Petit Verdot, aged 26 months in 75% new French oak. Deep garnet-purple in color, it comes bursting from the glass with bold warm cassis, black cherries and boysenberries scents with hints of chocolate mint, cedar chest, tobacco and underbrush plus a waft of black olives. Full-bodied, the palate is built like a brick house with a firm backbone of finely grained tannins and bold freshness, finishing very long with a provocative minty lift. Nicely done!

The 2016 Profile has come together beautifully since I tasted it last year. Super-ripe dark cherry, plum, chocolate, espresso, menthol, licorice and dark spice all run through this full-bodied, potent red. The 2016 is a big, overt wine, and yet it also has quite a bit of aromatic nuance and supporting structure.
