Pas in 2008 nam Kai het verwaarloosde wijndomein van zijn ouders over. Volledig autodidactisch stortte hij zich op het wijn maken. En niet zonder resultaat. Inmiddels VDP lid, de grootste stijger ooit in de Gault Millau én alle wijnen zijn al verkocht voordat ze gemaakt zijn. Kai werkt volledig biodynamisch waardoor de opbrengst in volume weliswaar is gekrompen, maar de druiven zóveel meer concentratie, smaak en body hebben gekregen.... Alle druiven worden met de voet/ rubberen laarzen gestampt en schilinweking is standaard. Spontane vergisting geschied op natuurlijke manier (eigen gisten) en de wijnen worden opgevoed in grote oude foeders. Bevriend met Keller en Egon Müller en behept met de beroemde Roter Hang in Rheinhessen en natuurlijk de Kabinett stijl wijnen. Hij maakt GG wijnen met 10% alcohol, echter dat is niet toegestaan dus zijn ze 11,5%. Zijn Kabinett kan 5% alcohol hebben, maar ook dat is niet toegestaan dus hebben ze 7,5% alcohol. Deze wijnen hebben tijd nodig en hebben een geweldig bewaarpotentieel.
