Sparkling Wine: From Champagne to Prosecco and Cava

Sparkling wines are produced all over the world, but a few regions stand out for their quality and tradition. Think of the world-famous Champagne from France, the refined Cavas from Spain, or the fresh Proseccos from Italy. Champagne, Prosecco, and Cava: Origin and Quality

Champagne is named after the French region it originates from. Only wines produced in this area under strict regulations may carry the name Champagne. Even if the same method is used elsewhere, such wines are referred to as Cava or sparkling wine – never Champagne.

The best Cavas come from Empordà and Penedès in Spain, while Franciacorta – from Lombardy – is often called “the Champagne of Italy.” For the finest Prosecco, look to the Veneto region, where both Spumante and Frizzante styles are made from the Glera grape.

 

What Does Dosage Say About the Taste?

The taste of Champagne and other sparkling wines is closely linked to the amount of residual sugar – known as the dosage. You can find this indicated on the label:

How Is Cava Made?

Cava is produced using the méthode traditionnelle, the same technique used for Champagne. This involves a second fermentation in the bottle, creating Cava’s signature fine bubbles. After fermentation, the yeast sediment is removed through the traditional remuage and disgorgement process. The wine is then aged for at least 9 months, or up to 30 months for Gran Reserva Cava.

 

How Is Prosecco Made?

Prosecco is most commonly made using the Charmat method. Here, the second fermentation takes place in a sealed stainless steel tank, which helps retain the wine’s fresh and fruity character. This method is faster and more cost-effective than the traditional method and produces a lighter, more approachable sparkling wine. Some premium Proseccos are made using bottle fermentation.
