The Organza from Sierra Cantabria Organza barrel/barrique fermented is a blend of the Viura, Malvasia & Garnacha Blanca grapes and comes from the old vineyard San Vicente de la Sonsierra. After manual picking, the grapes are cold soaked for 12 hours to extract extra flavor and aroma from the grapes. The fermentation takes place in new French oak barrels. Followed by barrel aging for 9 months and battonage (stirring the dead yeast cells for extra body and volume) twice a week during the first 6 months. This is a beautiful refined white Rioja with beautifully refined oak and a nice butterscotch.
