Winery Domaine EdeM

Domaine EdeM was created in honor of Elena Maza, wife of Nicolás Catena, and serves as the platform for Catena Zapata's alcohol-free wines. This project, led by the Catena Institute of Wine, involved sensory analysis, wine chemistry, and extensive tasting panels. The focus is on preserving aroma, structure, and freshness, even without alcohol. Sustainability, precision, and technical control are central to both raw material selection and production.

Region, climate and location

N.0 Rosae uses grapes from Toledo, Spain. This region offers a suitable climate for harvesting fresh and aromatic grape juice, with sufficient acidity to make sparkling wine. The dry climate contributes to healthy grapes, while the controlled harvesting times ensure pure and clear fruit expression.

Cuvée N.0 Rosae

N.0 Rosae is an alcohol-free sparkling rosé expressly designed as a worthy alternative to classic sparkling wine. The style focuses on elegance and balance, with a refined mousse and a distinct floral signature. Kept distinctly dry, the wine is intended for pure enjoyment, as well as for light gastronomic occasions.

Vineyards

The base of this wine is carefully selected Airén grapes. These grapes are known for their neutral character and fresh acidity, making them ideal as a base for alcohol-free sparkling wine. The selection focuses on the quality and purity of the juice, not on yield.

Grape varieties and composition

The wine is made from Airén grape juice from Toledo. This grape provides a light, fresh base with subtle fruit notes, creating space for aromatic refinement and floral accents. The composition focuses entirely on the balance between freshness, texture, and aromatic clarity.

Harvest

The grapes are harvested for freshness and aromatic potential. Immediately after harvest, the juice is pressed and cooled to prevent oxidation and preserve the primary aromas. This forms the basis for further controlled processing.

Vinification

After pressing, the grape juice undergoes controlled fermentation at low temperatures, which produces carbon dioxide and develops fresh, aromatic profiles. The alcohol is then removed via vacuum distillation at a low temperature. This method preserves aromas, flavor, and freshness. Finally, natural rose petals are infused, which creates the characteristic floral aromas of N.O. Rosae. The wine is then carefully bottled to preserve its mousse and elegance. Maturation

There is no classic bottle aging as with traditional sparkling wine. The focus is on preserving freshness, aromatic expression, and mousse. The wine is meant to be enjoyed young and vibrant, when the floral notes and tension are most pronounced.

The color is light pink with subtle golden reflections. The nose reveals delicate aromas of rose, pear, and fresh citrus, complemented by a light spiciness.
