The Bollinger The Special Cuvée (60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier) is a unique creation and is the flagship of the Bollinger house. Year after year, the Special Cuvée is consistently tasty in the characteristic, powerful Bollinger style. More than 65% of the grapes come from our own vineyards. Beautiful golden yellow Champagne. Matured, complex and rich in taste with notes of toast, caramel, walnuts, pear, ripe fruit and mushrooms. Soft mousse with long-lasting bubbles. A characterful champagne with lots of elegance. Combine this Champagne with all types of fish and in particular sushi and sashimi. Also delicious with shrimp, crayfish or lobster. Prefer meat? Then choose poultry or white meat. Also very good to combine with Parmesan cheese and salted ham.

1. Crispy fried veal sweetbreads with cauliflower puree and hazelnuts
The fine fattiness of the sweetbreads is refreshed by the lively acidity of the champagne, while the cauliflower puree complements the soft texture of the wine. The nutty notes in the champagne are enhanced by the toasted hazelnuts.

2. Classic steak tartare with egg yolk and capers
The structure and earthy flavour of raw beef work surprisingly well with the creamy mousse and toasty notes of Bollinger. The fresh acidity provides a contrast to the rich egg yolk, and the saltiness of capers perfectly complements the drier style of this champagne.

3. Smoked salmon with chive cream and crispy brioche bread
The fatty structure of the salmon requires a powerful, fresh companion. The Special Cuvée cuts through the fat beautifully and brings elegance, while the brioche bread echoes the yeast tones in the champagne.

4. Roasted chicken with truffle jus and celeriac gratin
This combination plays on the creamy and earthy register. The truffle enhances the complexity of the champagne, while the celeriac gratin provides a soft texture that matches the fine mousse. The grilled chicken makes it savoury without being too heavy.

5. Dutch shrimps with avocado and citrus vinaigrette
The salty shrimps connect with the maritime freshness of the champagne. The soft avocado and fresh acids of the vinaigrette bring balance and keep the whole elegant.

6. Poached lobster with vanilla butter and green asparagus
This luxurious combination perfectly matches the Bollinger's maturation notes. The subtle sweetness of the lobster and vanilla emphasize the ripe fruit notes in the wine, while the green asparagus provides a slightly bitter counterpart that keeps the whole thing in balance.

Since its foundation in 1829, the Champagne house Bollinger is located in Ay and family owned. The winery has 151 hectares of vineyards, mainly in Grand and Premier Cru areas. The uniqueness of these famous sparkling wines lies in the high standards of ethics and quality that the family has set for itself. These written principles dictate, for example, that the vinification of all wine takes place on the winery itself and is stored there on oak.

Both these high quality standards and the practice practiced to assemble only the best vintages from the best cultivation areas ensure the constant top quality of this Champagne, which Daniel Graig also prefers as a 007 agent.

The high quality requirements start at Bollinger in the vineyard. There is actually no second producer who selects the grapes so carefully at harvest, selects only the ripest grapes and consequently reduces the yield as Bollinger. The fact that people also know the literal side of champagne in this house is shown by the famous quote from Madame Bollinger, who answered the question when she prefers to drink champagne: “I drink champagne, when I am happy and when I am sad. I often drink it when I am alone; and if I have company, it should not be missed. When I'm not hungry I get hungry and when I'm hungry I let it taste good. Furthermore, I don't touch it unless I'm thirsty. ”
