The Vega Medien winery and their commitment to organic cava

Vega Medien is a progressive winery from Requena, in the province of Valencia. This region in eastern Spain is known as one of the leading areas for organic sparkling wines. The winery is part of the Unión Vinícola del Este group, but operates with a strong focus on sustainability and respect for nature and terroir. The family behind Vega Medien believes that a wine only truly reaches its full potential when the vineyard is healthy and the grapes can ripen without chemicals. Therefore, all wines are certified organic and produced with a focus on biodiversity and energy efficiency.

The Requena region and its unique climate

Requena is located at an altitude of approximately 700 meters inland from Valencia. This location ensures cool nights and warm days, ideal for the slow ripening of the grapes. The Mediterranean climate with continental influences creates a perfect balance between freshness and ripeness. The chalky soils contribute to the minerality and finesse so characteristic of Vega Medien Cavas. The vineyards are farmed organically, using natural compost and without the use of pesticides or herbicides. This preserves the purity and full expression of the grapes, a characteristic you can immediately taste in the Vega Medien Brut Ecológico.

The style of Vega Medien: organic cavas with refinement

Vega Medien specializes entirely in sparkling wines made using the traditional method, which involves secondary fermentation in the bottle. By working exclusively with organic grapes and controlled fermentation at low temperatures, their cavas always retain their fresh and elegant character. The Vega Medien Brut Ecológico is a textbook example of this style: pure, fruity, and with a fine mousse that gives the wine its lively structure.

Grapes and vinification of the Vega Medien Brut Ecológico

For this Cava, only the finest organic white grapes from Requena are used: 75% Macabeo and 25% Chardonnay. The Macabeo provides freshness and subtle floral notes, while the Chardonnay adds structure, body, and complexity. After careful selection, the grapes are gently pressed. The primary fermentation takes place at a controlled temperature to preserve the aromatic freshness. This is followed by the secondary fermentation in the bottle, where the wine rests for at least twelve months at a constant temperature of 15°C, completely protected from light and vibration. During this period, the wine develops its roundness, complexity, and a fine, elegant bubble. The result is a well-balanced organic Cava with 11.5% alcohol and a dosage of 8 g/L.

Color, smell and taste of the Vega Medien Brut Ecológico

The Vega Medien Brut Ecológico has a straw-yellow color with a subtle green hue and a lively, fine, and persistent mousse. The nose reveals fresh aromas of white peach, apple, and citrus, with elegant notes of brioche and pastry in the background. On the palate, the wine is round and harmonious, with a soft mousse that envelops the palate. The finish is long and refined, with a hint of ripe fruit that invites you to the next sip. This Cava is not only fresh and festive but also offers a wide range of culinary possibilities thanks to its balanced structure.

Serving temperature and drinking time

Serve this Cava chilled between 6 and 8°C. It's excellent as an aperitif, but also pairs wonderfully with a full meal. Vega Medien Brut Ecológico pairs effortlessly with Mediterranean dishes such as grilled fish, seafood risotto, light pasta, or even a succulent magret de duck. Its freshness and delicate mousse keep the wine exciting from start to finish.

Cavas Marevia makes cava the way it’s meant to be: fresh, pure, and with respect for nature and tradition. Everything here revolves around time, balance, and terroir.

The History of Cavas Marevia

The story of Cavas Marevia begins in 1861, with the founding of Casa Sala. More than a century later, in 2004, the family tradition was revived with the establishment of Cavas Marevia itself. In 2019, the estate became part of the Hevia-Ferrer family, who continued the passion for wine and sustainability. From the very beginning, their philosophy has remained simple: great wine starts with respect for the earth and the time grapes need to develop their character.

Location: Requena, Where the Highlands Meet the Sea

Cavas Marevia is located in Requena, a historic wine-growing area in the Valencian region. The vineyards lie on a plateau bathed in Mediterranean sunshine but cooled by the altitude at night. This combination produces wines with freshness, tension, and elegance. The landscape is rugged yet beautiful, where vines alternate with almond and olive groves. Everything here grows in harmony.

Organic Viticulture as a Conviction

At Cavas Marevia, everything revolves around organic farming. No herbicides, pesticides, or synthetic fertilizers are used. The vineyards are managed with care for biodiversity and soil health. Even in the cellar, that principle holds true: they use non-GMO yeasts, organic sugar for the second fermentation, and cold stabilization without chemical additives. This approach is not a trend, but a conscious choice that has made the winery one of the pioneers of organic cava within the D.O. Cava.

Grape Varieties and Style at Cavas Marevia

Cavas Marevia works with a mix of classic and modern grape varieties: Macabeo, Chardonnay, Pinot Noir, and Garnacha. This combination gives their cavas a distinctive style – fruity, fresh, and elegant with a light, approachable mousse. The wines are expressive, well-balanced, and made to be enjoyed at any moment, without losing their character.

Sustainability in Every Detail

For Marevia, sustainability is not a slogan but a daily reality. The bodega is fully certified and holds the SWfCP label, Spain’s leading sustainability certification for wineries. Solar panels on the roof provide 530 kW of power, ensuring complete energy self-sufficiency during peak production. The remaining energy comes from renewable sources. Since installation, the winery has saved over 738 tons of coal and reduced CO₂ emissions by more than 877 tons – equivalent to planting 1,150 trees. Even the bottles have been made lighter to reduce transport impact.

Fun Facts

  • The vineyards sit at the border of land and sea, creating unique microclimates.
  • The winery is largely self-sufficient in energy thanks to solar power.
  • Cavas Marevia has invested over €1 million in sustainability and innovation.
  • The house motto: the best toast is one made with respect for the planet.
