Description
San Giovanni is produced from the vineyards surrounding the medieval castle of Castello della Sala and is a blend of indigenous varieties, Grechetto, Procanico, Pinot Blanc, and Viognier; a new interpretation of the Orvieto Classico appellation. The first vintage of Castello della Sala's Orvieto Classico was 1990 and is a contemporary representation of Orvieto Classico.
After the plus, the grapes were taken to the cellar, and each grape variety was fermented separately to enhance its unique characteristics. A portion of the must was cold-soaked on the skins for about six hours at a controlled temperature of 10°C (50°F), then blended with the other portion, which was gently pressed to maximize extraction. The blended must was then transferred to temperature-controlled stainless steel tanks where alcoholic fermentation took place at a temperature of 16°C (60°F). The wine was aged on the lees (sur lie) for several months until the final blending and bottling to enhance its structure, elegance, and minerality.
The Antinori Castello Della Sala San Giovanni Della Sala Classico Superiore has a pale straw yellow color with green highlights. The nose offers pleasant notes of tropical fruit that blend with light mineral notes. On the palate, it offers an excellent balance between structure and freshness, with a good savory character and a pleasant persistence of yellow fruit.

In 1180, Ugo and Antinori di Rinuccino were officially named as owners of Castello di Combiate; a century later, the family who had moved to Florence were included in the register of the silk trade cooperative. In 1385, Giovanni di Piero, an indirect descendant, entered the wine guild as an apprentice. Since then, the wine-growing tradition of the Antinori family has been continuous. With the establishment of the Marchesi Antinori winery, the peak was reached in 1895 and already in 1898 the winery was built in San Casciano Val di Pesa, which is still the center of the widely branched group of properties in all major cultivation areas of Tuscany, Umbria. , Piemonte (since the early 90s through the purchase of the wine cellar Prunotto), Apulia and even California.
