Roman Niewodniczanski, who took over the domain in 2000 and completely restored it, is part of the Bittburger family. His drive for quality is unstoppable and his aim is to optimally let the various top terroirs (steep mineral-rich slate, sandstone and rhyolite) speak. For this, major investments have been made in the vineyards and the grapes are always picked late and manually in different phases at the end of October/November. Read more under the tab: Winery

This Van Volxem Saar Riesling consists entirely of the Riesling grape. After a manual harvest, the grapes from 30-year-old vines are partly placed in stainless steel tanks where they also undergo fermentation. There is no malolactic fermentation. The vinification process of this wine takes about 6 to 7 months, after which bottling takes place without clarification. The Van Volxem Saar Riesling is a powerful, fresh and aromatic scent of elderflower and peach. A full body with a pleasant mineral tone and fresh acids. Perfect with fish dishes such as ceviche, shellfish, but also with Asian dishes and spicy flavors. It also goes well with creamy and fresh cheeses, but we also like to drink it standalone. Beautiful acids and a limited alcohol percentage make this an extremely enjoyable wine.
