Italian immigrant Samuele Sebastiani came to California in the late 19th century and quickly became known in Sonoma for his quality wines with a wide range of internationally known grape varieties. The specialties for the area are Chardonnay and Pinot Noir. But Sebastiani can also call himself the pioneer of the Cabernet The Sebastiani North Coast Cabernet Sauvignon comes from vineyards in California, in Lake County and Sonoma and is a blend of mainly Cabernet Sauvignon with a little Malbec and Merlot. The grapes are harvested at night and are given a cold maceration of two days. The grapes are then crushed and fermentation starts at a fairly high temperature in stainless steel tanks to extract as much flavor as possible. After pressing, the wine is blended and matured for 16 months in new and used barrels of French and Hungarian oak, of which 25% are new barrels. In the glass, the Sebastiani Cabernet Sauvignon has a dark ruby red color with in the nose tones of blackcurrant, blackberries, cassis and hints of coconut and vanilla. The smell continues in the taste. Powerful flavors of black fruit (blackberries, cassis) supplemented with vanilla and coconut through the wood maturation. Delicious with old, Dutch cheeses. Also delicious with stews.

ABOUT AVA NORTHERN COAST

From the rolling hills of the south to the giant redwood forests of the north, the North Coast vineyards span over 3 million acres, united by the climatic influence of creeping Pacific morning fogs and coastal breezes. Home to one of the most temperate climates in California, this area includes most of the state’s famous and acclaimed wineries. The AVA consists of the famous areas north of San Francisco. Napa, Sonoma, Mendocino, Lake, Solano and Marin counties are found here, as well as the sub-appellations of Russian River Valley, Stags Leap and Los Carneros. The best wines from the area are not labeled under the North Coast AVA. Instead, they are associated with specific AVA sub-appellations. As such, the North Coast AVA wine style will be more of a generic California red, blending fruit from across the appellation. The climate, cooler than the Central Coast, produces fresher, more expressive Cabernet Sauvignon, bold Zinfandels, fine Pinot Noir, fruity Merlot, tropical Chardonnay and crisp Sauvignon blancs.

Italian immigrant Samuele Sebastiani came to California in the late 1800s and quickly became known in Sonoma for his quality wines using a wide variety of internationally renowned grape varieties. The specialties for the area are Chardonnay and Pinot Noir. But Sebastiani can also call himself the pioneer of the Cabernet Sauvignon in Sonoma. They were the first winery in the AVA to plant Cabernet Sauvignon.

The Sebastiani winery was founded in 1904. At the time, the winery was built in a very rural area for that time, known for agriculture and cattle breeding. The agricultural air that could occasionally be smelled as far as the coast in an easterly wind was jokingly referred to as 'Sonoma aroma'. At that time, it was mainly farmers who came to Sonoma because of the good farmland and cooling conditions from the American west coast. Samuele initially did not come to California to grow wine, but to work on the streets of San Francisco. In the early 20th century he was also responsible for the construction of the rural village center of Sonoma, which still exists today in the same capacity. In 1904 he went there to make wine for the local population.

Sonoma proved to be ideal not only for agriculture in general, but even more specifically for viticulture. It is the Pinot Noir and the Chardonnay that benefit most from this unique microclimate, which is characterized by the so-called Humbold Gulf Stream. But Cabernet Sauvignon also plays an equally important role for Sebastiani here.

Sonoma is now one of the most sustainable and innovative wine regions in California. This is reflected in the balanced soil policy in the Sebastiani vineyards: compost use is encouraged and the use of pesticides is minimized. In addition, there is a water management program, in which the amount of irrigation water is reduced, and a recycling program.
