Description
The grapes are hand-picked, which is no easy feat, as this is a very old vineyard (100-160 years old) with vines that require a lot of effort. After harvesting, the wine is cooled and fermented with its own indigenous yeasts. After fermentation, the wine is aged in barriques and foudres for 9-12 months, after which the Ossian is bottle-aged for a year before being released in small quantities. The Ossian is an expressive Verdejo wine and unique in its kind. White fruit with tropical notes, minerals, a hint of roasted tones, and a superb finish. A highly stylized, complex nose with wild mushrooms, truffle, biscuit, and roasted almonds. It has been awarded 94 Parker points and 94 points by James Suckling. The Ossian is a true Top Verdejo! It is organic and certified—so delicious, but availability is limited!
FACT: The single vineyard used for Ossian is unaffected by grape aphids (pre-phylloxera) and is therefore so old. This is because the aphids migrate through a tunnel system in the soil. The soil of Ossian and Ossian Capitel is so extremely sandy that the aphids cannot dig a tunnel (which would then collapse). This is why these vineyards are so extremely old and still completely authentic. Vegan certified .

1. Scallop tartare with green apple, lime and dill
The fine structure and sweetness of the scallops perfectly complement the soft, rounded style of the Ossian Verdejo. Green apple and lime enhance the wine's fresh acidity and citrus aromas. Dill adds a subtle herbal note that integrates beautifully with the Verdejo's floral and mineral character.
2. Tagliatelle with lemon ricotta and fresh herbs
The creamy ricotta captures the wine's soft, creamy texture, while lemon and a blend of herbs (such as basil and tarragon) further enhance the citrus notes and spiciness.
3. Grilled lobster tail with lime beurre blanc
The mineral and citrus-rich profile of the Verdejo harmonizes with the buttery sauce, while the lobster and the acidity of the lime are perfectly highlighted.
4. Fennel and orange salad with goat cheese and roasted pine nuts
Fennel and orange play on the citrus and floral notes, goat cheese adds a creamy layer, and the pine nuts complement with a subtle nutty accent.
5. Roasted asparagus with Parma ham and juicy pear vinaigrette
The refined minerality and ripe pear notes in the wine form an elegant contrast with the savoury Parma ham and the freshness of the dressing.
6. Creamy risotto with chanterelles and finely grated pecorino
The umami richness of the mushrooms combines beautifully with the smoky and nutty nuances of the wine. The risotto's texture echoes the creaminess of the Verdejo.
Ossian Winery
Ossian was founded by Javier Zaccagnini, also a partner and director of Aalto in Ribera del Duero, and Ismael Gazalo, whose family has been making wine in the region for years. Ossian is now owned by the renowned Pago de Carraovejas winery, which has continued the trend of producing absolutely top-quality wines. The extremely old Verdejo vineyards are located in the village of Nieva, 850 meters above sea level. The vines are between 100 and 160 years old, making this the oldest certified organic vineyard in Castilla y León. The vineyards are situated on sandy soils, meaning Ossian is still made from the original, ungrafted, authentic vines (pre-phylloxera). At Ossian, they don't just make your average Rueda. Quite the opposite, in fact. Javier enlisted the help of a top-notch oenologist from Burgundy. Together they vinify the small-yield, unique Verdejo in the Burgundian style, just as Pierre does with Chardonnay in Meursault and Puligny Montrachet. In some years, they create a top-notch cuvée, "Ossian Capitel." In just a few years, Ossian has become Spain's most respected white wine and is also highly sought after and appreciated internationally.

They didn't have any frost in 2022 and were able to use grapes from all the plots for the 2022 Ossian. They have very old vines in Nieva and surrounding villages in the province of Segovia, 10 different villages, and it's rare that they all escape from frost. The blend is a very good representation, all fermented with indigenous yeasts in barrels and foudres, some in glass demijohns, which made for a very complete and pretty wine that seems to transcend the warm and dry character of the year. It has purity and is elegant and precise, with complexity, a fine thread and a very pleasant and varietal bitter twist in the finish. It has good ripeness, 13% alcohol and a sensation of balance, harmony and subtleness. 101,545 bottles produced. It was bottled in the summer of 2023.
Ossian, the Rueda project from the Pago de Carraovejas group, is building a new winery, studying their soils and improving their range. Production averages 190,000 bottles. 2022 is a very warm and round vintage, but the wines have much more freshness than anticipated; 2023 was cooler but affected by frost and therefore low yielding.

A serious old-vine verdejo that shows the power of minerality. Lemon zest, wet stones and some chopped dried herbs. Creamy, medium- to full-bodied palate, but it remains transparent, limpid and textured. Drink now or hold.

Pale yellow-gold. Fresh peach, orange pith, pear and a suggestion of fennel on the powerfully scented nose, along with a hint of jasmine. Juicy and energetic in the mouth, offering vibrant Meyer lemon, pear nectar and honeysuckle flavors that are accented by a dusty mineral nuance. Silky and sharply focused on the finish, which shows strong, nervy lift, firm mineral cut and impressive persistence.

Owned by the Ruiz family of Pago de Carraovejas fame, Ossian, a 90-hectare estate, is, to my mind, the leading producer of white wines in central Spain and produces some of the best whites in the country. Dissatisfied with the political machinations of the Rueda DO, Ossian is not a member of the association. That means that their wines, despite being made from some of the region’s oldest (up to 200 years old!), ungrafted and pre-phylloxera bush vines in the prime Nieva zone and with no compromise or expense spared on quality, bear the simple Castilla y Léon appellation. It’s worth noting that only ambient yeasts are used here, with no enzyme additions, which is way out of line with the normal, highly commercial practices of practically all of the bodegas in Rueda. As always, it’s what in the bottle that counts, and these are wines that transcend Rueda. All of them see much longer fermentations than is the norm for Rueda, in a variety of vessels, mostly French oak. The top bottlings here will age effortlessly and show the minerality and complexity of serious white Burgundy after a couple of years. Also worth noting is that, the wines are made with the consulting help of Rafael Palacios, who makes some of Galicia’s most highly regarded white wines at As Sortes, his bodega in Valdeorras.

Ossian is also jokingly referred to as the White Aalto because Ossian is the mini-project of Javier Zaccagnini, also partner and director of Aalto in Ribera Del Duero, and Ismael Gazalo, whose family has been making wine in the region for years. The extremely old Verdejo vineyards are located in the village of 'Nieva' and are 850 meters above sea level. The vines are between 100 and 160 years old making this the longest certified vineyard in Castilla y León. On Ossian not just any Rueda is made as you will find thirteen in a dozen. No, on the contrary, Javier hired a Burgundian topoenologist. Together they vinify the small yield unique Verdejo in a Burgundian way, just like Pierre does with Chardonnay in Meursault and Puligny Montrachet. In some years a top-top cuvée is made 'Ossian Capitel'. In a few years, Ossian has grown into Spain's most revered white wine.
In 2013, Ossian was bought by José María Ruiz (from the top house Pago de Carraovejas from the Ribera del Duero) and Zaccagnini left the company. Nevertheless, the young winery remains focused on the same high quality standards and there is even more innovation and Ossian is among the absolute top of the Verdejo wines from the Rueda.
