The Fundamental Chardonnay may say “Central Coast” on the label, but in reality this vintage it’s made from 100% Santa Barbara fruit. Created by renowned winemaker Joey Tensley and his wife Jennifer Tensley. The philosophy behind Fundamental Wines is simple: to deliver a wine that is fundamentally solid and straightforward, yet excels in quality and approachability – to us, it’s a California white wine of exceptional value for the price. Joey Tensley, who founded his original Tensley Wines brand in 1998 and has grown both the brand and its reputation impressively since then. Praised by wine connoisseurs and critics alike, this Chardonnay is an example of Tensley’s craftsmanship and dedication to quality.

Winemaker Notes: “With one of the coolest vintages on record. This wine shows a distinct minerality on the nose. Once you taste it you will get loads of traditional chardonnay flavors like apple, lemon, tropical fruits and a pinch of buttery oak. It's such a fun wine to drink because it covers all of the bases of texture and acidity.”

3. Corn chicken with polenta and roasted peppers

The sweet notes of corn chicken and paprika enhance the wine's ripe character. Polenta adds creaminess, and the whole thing remains subtle enough to let the wine speak.

4. Baked salmon with honey mustard sauce and green asparagus

The fatty structure of the salmon goes hand in hand with the roundness of the wine. Honey and mustard give a sweet-spicy twist that matches the fruit and the soft acids, while asparagus provides a fresh accent.

5. Roasted cauliflower with curry and coconut

The warm spices and soft texture of cauliflower complement the full-bodied style of the wine. Coconut adds an exotic, soft touch that harmonizes beautifully with the tropical fruit in the wine.

6. Lobster ravioli with vanilla butter and chives

The rich, soft texture of the lobster and the delicate vanilla notes from the sauce perfectly reflect the maturity and wood used in the wine. Chives provide a fresh, spicy contrast.
