2022 Antinori Castello della Sala Orvieto Classico Superiore San Giovanni della Sala
The San Giovanni is produced from the vineyards surrounding the medieval castle of Castello della Sala and is a blend of indigenous varieties, Grechetto, Procanico with Pinot Blanc and Viognier; a new interpretation of the Orvieto Classico appellation. The first vintage of Castello della Sala's Orvieto Classico was 1990 and is a contemporary representation of Orvieto Classico.
After the plus, the grapes are taken to the cellar and each grape variety was fermented separately to enhance their unique characteristics. Part of the must was cold soaked on the skins for approximately 6 hours at a controlled temperature of 10 °C (50 °F) and then mixed with the other part which was only gently pressed to obtain maximum extraction. The mixed must was then transferred to temperature-controlled stainless steel tanks where alcoholic fermentation took place at a temperature of 16 ° C. The wine was aged for several months on the lees (sur lie) and until the final blending and bottling to improve its structure, elegance and minerality.
The Antinori Castello Della Sala San Giovanni Della Sala Classico Superiore has a pale straw yellow color with green accents. The nose offers pleasant notes of tropical fruit that merge with light mineral sensations.
