2021 Venus la Universal Dido La Solució Rose

Sara Pérez is the wife of Rene Barbier who makes the famous Clos Mogador, Espectacle and Manyetes. Sara Pérez is also in charge of the Clos Martinet family estate. She also works closely with her brother Adria on Cims de Porrera. Father José Luis Pérez, one of the most important figures in the Spanish wine world, is proud of his children. He himself remains active in various wine projects. Together with her husband René Barbier (Clos Mogador), Sara Pérez owns and vinifies beautiful wines at Venus La Universal. As a tribute to every small food manufacturer from the 1920s who wanted to grow up, Sara has christened this mini-domain Compania Universal de Vinos.

This Dido Rosat is made with different types of Garnatxa (Grenache) (grey, red and white) but also with Macabeu and Carinyena to provide acidity and reduce the alcohol feeling. The 2021 Dido Rose was only bottled in mid-March 2022. The Dido La Solució Rosa is a blend of:
Black garnatxa 55%
Macabeu 20%
Carinyena 10%
Garnatxa white 10%
Garnatxa gray 5%

After all varieties were pressed at the same time, the most grape is fermented in old oak barrels. The fermentation process was long, lasting as much as 6-9 months. This process was then followed by 16 months aging in a 60 year old oak foudre of 4000l and a clay pot of 3000l and this is also the total production.

It has more acidity and freshness but is also super complex due to the very long time matured in used barriques, but the acidity makes it feel very young. This will develop even further on the bottle, something that is unusual for a rosé. But this rosé is unusual and Parker writes: "In fact, I wouldn't even call it a rosé. If you want to surprise someone, open a bottle of this. A rosé that is more white than the white... " is truly wonderful like all Venus wines from Sara Pérez and is a wine that can age wonderfully and is in the style of the Tondonia Rosé

In some cases, the wines are given a kind of WAX closure instead of a regular capsule. This has no further purpose and has the disadvantage that it hardens quite quickly and pieces can then simply crumble (spontaneously, during transport, etc.). This has no influence on the quality of the wine. We cannot give any further guarantee for this.
