Description
Sara Pérez is the wife of Rene Barbier, who produces the famous Clos Mogador, Espectacle and Manyetes. Sara Pérez is also in charge of the family estate Clos Martinet. She also works closely with her brother Adria at Cims de Porrera. Father José Luis Pérez, one of the most important figures in the Spanish wine world, is proud of his children. He himself remains active in various wine projects. Together with her husband René Barbier (Clos Mogador), Sara Pérez owns and vinifies magnificent wines at Venus La Universal. As a tribute to every small food manufacturer from the 1920s who wanted to become big, Sara has named this mini-estate Compania Universal de Vinos.
This Dido Rosat is made with different types of Garnatxa (Grenache) (grey, red and white) but also with Macabeu and Carinyena to provide acidity and reduce the alcohol sensation. The 2022 Dido Rose was not bottled until mid-March 2024. The Dido La Solució Rosa is a blend of:
Black shrimp 50%
Macabeu 20%
Ull de Llebre 15%
Carinyena 10%
Shrimp white 2.5%
Grey shrimp 2.5%
After all the varieties were pressed at the same time, most of the grapes were fermented in old oak barrels. The fermentation process was long and lasted for 6-9 months. This process was then followed by 16 months of aging in a 60 year old oak foudre of 4000l and a clay pot of 3000l and this is also the total production.
It has more acidity and freshness but is also super complex due to the very long time matured in used barriques, but because of the acidity it feels very young. This will develop further in the bottle which is unusual for a rosé. But this rosé is unusual and Parker writes: " In fact, I wouldn't even call it a rosé. If you want to surprise someone, open a bottle of this. A rosé that is more white than the white... " This is truly beautiful like all Venus wines from Sara Pérez and is a wine that can age wonderfully and is in the style of the Tondonia Rosé

1. Grilled peach, burrata and basil salad
The soft, creamy burrata contrasts with the acidity of the wine, while the grilled peach and basil enhance the fruity and spicy notes.
2. Tuna tataki with sesame, radish and soy dressing
The umami in the tuna and soy brings out the depth in the wine, and the freshness of the radish complements the lively acidity.
3. Roasted chicken with harissa, sweet potato and lime zest
The spicy harissa and sweet potato give the dish a warm base that harmonizes with the spicy and slightly smoky accents in the wine. The lime zest keeps it fresh.
4. Grilled zucchini with lemon, mint and feta
The salty feta and fresh herbs emphasize the tension between fruit and acidity in the wine. The structure of the courgette suits the light but present character of this rosé.
5. Prawns with saffron mayonnaise, fennel and blood orange
The juicy prawns enhance the salty and fresh character of the wine, while saffron and orange bring out the Mediterranean notes in the glass.
6. Quail stuffed with dried apricot, almond and orange zest
The combination of light game, fruity accents and nuttiness perfectly matches the complex flavour profile of the wine, in which freshness and structure are central.
In some cases, the wines will receive a kind of WAX seal instead of a regular capsule. This has no further purpose and has the disadvantage that it hardens quite quickly and then pieces can easily crumble off (spontaneously, during transport, etc.) This has no influence on the quality of the wine. We can give no further guarantee for this.

The unusual, characterful rosé 2021 Dido La Solució Rosa feels reductive and flinty with the character from the year, which was accentuated with some of the varieties—they reckon the Cariñena, even if it's a very small part of the blend of Garnacha Tinta, Garnacha Blanca, Garnacha Gris, Tempranillo, Macabeo and Cariñena. The old 4,600-liter oak foudre (over 50 years old!) used for this wine also adds to the character. In Montsant, the year seems to have marked the wines a lot. This year, the wine feels a lot more like a white wine; the red part comes out in warmer years, whereas cooler years deliver a more austere, elegant and sharp wine closer to a white. This wine matures incredibly in bottle; I've recently drunk some of the first vintages, and the wine is going very strong. 12,718 bottles were produced. It was bottled in March 2023.
Venus La Universal is the project from Sara Pérez and René Barbier in Montsant, where they work with nine hectares of their own vineyards plus 35 hectares from 14 growers, all certified organic and exclusively with those grapes (they don't buy other grapes). They produce 160,000 bottles. Since 2021, they have been renting the La Figuera cooperative, and the wine (Sindicat La Figuera) from there is now part of the Venus portfolio. Taking advantage of the facilities from La Figuera, they are doing other side projects (mostly without appellation), such as a Trepat, a wine with flor, perhaps a Cabernet... These Orbita Venus (Venus orbit), the things that are around Venus, will come in the future...
After a very rainy and unusual 2020 (770 liters of rain!), a very challenging year with lots of mildew, 2021 was marked by a snowstorm in January and was a cooler season with generous rain that delivered a crop for lighter wines with tension and contained alcohol. 2022 was warm and dry (only 350 liters of rain) and had multiple heat waves from May. They compared 2022 to 2015 (or 2009), a powerful year, but with less rain, both with good water reserves from the previous vintage and a great development of the plants, which were not stressed. The stress arrived in 2023. They like dry years that come with "wet feet," i.e., with water from the previous vintage. The wines are superb and feel more elegant than ever.

Father José Luis Pérez, one of the most important figures in the Spanish wine world, is proud of his children. He himself remains active in various wine projects. Sara Pérez owns and vinifies two beautiful wines on Venus La Universal, together with her husband René Barbier (Clos Mogador). As a tribute to every small food manufacturer from the 1920s who wanted to become big, Sara has baptized this mini-domain Compania Universal de Vinos. There on 'La Uni', as she likes to call it, she has created almost the mother of all feminine wines: Venus. And 'Dido' is the more than exemplary daughter of 'Venus'.
René and Sara took the goddess Venus as inspiration for this project. One of their goals is therefore to "interpret femininity through a bottle of wine". This may seem like a strange choice for a bodega working out Grenache and Carignan wines in Southern Catalonia, but it makes sense once you've tasted it. These are incredibly elegant, refined, sensual expressions from the Denominació d'Origen Montsant, with understated alcohol levels and enormous texture.
The grapes for the wines come from vineyards owned by four different grape-growing families in Falset, as well as another small plot owned by Venus. You could call Venus a negociative project, but it is more correct to say that it is a partnership between these four families and René and Sara. Venus is the sole customer of these small growers, so their grapes are grown in accordance with the strict ecological standards set by the couple. The grapes for Dido come from the Falset area, from vineyards with soils based on decomposed granite called sauló. These soils are low in organic matter and contribute to the production of grapes with great ripeness and fruit aromas. The grapes for Venus come from clay-limy soils between Marçà and Guiamets. These soils promote a slow, elegant and complex maturity.
