Domaine Frantz Chagnoleau is a small estate run by two talented winemakers, Frantz Chagnoleau and his wife Caroline Gon (winemaker at Héritiers du Comte Lafon). Frantz has a degree in oenology, having gained his experience working for Olivier Merlin in the Mâconnais. Caroline has two degrees in agricultural engineering and oenology; she worked at Newton Vineyards in Napa Valley before returning to France to work with Dominique Lafon as head winemaker for Héritiers du Comte Lafon. Having Dominique as a friend and mentor has had a profound influence on the pair, evident in a line-up of pure, terroir-driven Mâconnais wines.

Since 2013, all vineyards have been certified organic. Like Lafon, this dynamic duo believes in minimal intervention, including using only indigenous yeast, as the best way to express the nuances of each unique terroir. Aging takes place in largely large, used French oak, with harvesting done entirely by hand, plot by plot, allowing each vine to achieve the right balance of sugar and acidity before being picked. This dynamic duo are one of the most talented teams in all of Burgundy, farming the old-fashioned way and making micro-quantities of single vineyard white Burgundy from some of the best Chardonnay terroirs in the world.

The Saint-Véran Prélude has a beautiful light straw yellow color. This 100% chardonnay opens in the glass with aromas of orange oil, freshly baked bread, crispy orchard fruit and white flowers, followed by a medium-bodied, bright and precise palate with a fine, charming profile. The Frantz Chagnoleau Saint-Véran Prélude is a delicious glass and in price incomparable with, for example, the neighboring Pouilly-Fuissé.

  1. Salad with green asparagus, avocado and lime vinaigrette
The wine's fresh acidity pairs perfectly with the green vegetables and creaminess of avocado, while lime enhances the citrus aromas.

  2. Grilled chicken with lemon and thyme
The juicy meat and spicy note complement the lively freshness and light roundness of the wine.

  3. Pasta with zucchini, lemon and Parmesan
The subtle flavours of the vegetables and cheese are refreshed by the acidity and elegance of the Saint-Véran.

  4. Baked salmon with dill and yoghurt sauce
The fattiness of the salmon is nicely balanced by the mineral and citrus-fresh profile of the wine.

  5. Scallops with fennel puree and beurre blanc
The delicate seafood and creamy sauce enhance the refinement and soft structure of this Chardonnay.

  6. Risotto with lobster, lemon zest and a hint of tarragon
The creamy and slightly spicy flavours match beautifully with the tension, freshness and depth of this wine from Saint-Véran.

About Saint-Véran

Do not confuse the village of Saint-Vérand with the appellation of Saint-Véran, even though the former gave the latter its name. Today, the appellation consists of not just one, but eight villages, covering 703 hectares (1,737 acres) of vines. Saint-Véran is located in the Maconnaise region of Burgundy and is slightly smaller and lesser known than its neighbor Pouilly-Fuissé. As in the rest of the region, Chardonnay is the primary grape. The wines are consistently of high quality with the added benefit of being reasonably priced. Flint, nuts and citrus fruits (mainly orange) are the most noticeable and typical aromas and flavors of the fine Chardonnays from Saint-Véran

Domaine Frantz Chagnoleau is located in the picturesque village of Pierreclos and covers (only) 6.8ha. Frantz is undoubtedly one of the great talents of the Mâconnais. His wife is a manager at Héritiers Du Comte Lafon! In terms of wine, it is already a top couple!
