Chassagne-Montrachet, together with Meursault and Puligny-Montrachet, forms the heart of the Côte de Beaune, the Valhalla of Chardonnay. Domaine Borgeot is located in the village of Rémigny on the Côte de Beaune. It was founded in 1903 and is now run by the fourth generation of brothers Laurent and Pascal Borgeot. All the fruit comes from vineyards within the family Domaine, located in the village of Rémigny in the Côte d'Or. The total vineyard area is 23 hectares spread over the villages of Bourzeron, Santenay, Chassagne-Montrachet and Puligny-Montrachet. In the vineyard, brothers Pascal and Laurent apply a 'lutte raisonnée' approach, which means that they do everything they can to adhere to the principles of organic farming and avoid the use of pesticides. The magic of Domaine Borgeot lies in the two people who make these charming wines. Pascal is calm, measured and brings an element of control to Laurent, who can’t sit still for a minute. As the saying goes in Burgundy, if you look at the person behind the wines, you get a sense of the style of wine in your glass. Domaine Borgeot wines display the calm restraint of Pascal balanced by the exuberance and liveliness of Laurent.

The wine village of Saint-Aubin is located in the Côte de Beaune west of Puligny-Montrachet and Chassagne-Montrachet. A number of 1ers Crus vineyards in Saint-Aubin border anxiously close to the world-famous Grands Crus vineyards of Puligny-Montrachet and Chassagne-Montrachet. With these two big wine villages nearby, it is not surprising that Saint-Aubin, despite being separated by a small ridge, can boast of excellent white wines. Often a lot more friendly in price but certainly no less in quality. The Saint-Aubin Premier Cru cuvée "Derrière chez Edouard" has belonged to the Edouard family for over a century. This Premier Cru Saint-aubin is a creamy and fruity wine! This floral and mineral white wine exudes aromas of white flowers, almond and orange blossom. In the mouth the wine is generous, with a nice tension and a nice fatty side.

  • Grilled chicken with lemon and thyme, served with roasted vegetables
The light spice and lemon aroma complement the fresh acidity of the wine. The roasted vegetables enhance the roasted notes of the oak.

  • Baked salmon with dill and a yoghurt sauce with cucumber
The round structure of the Chardonnay captures the fat of the salmon well, while the minerality and acidity are enhanced by the fresh sauce.

  • Risotto with mushrooms and Parmesan cheese
The creamy texture of the risotto matches the slightly creamy wood influence of the wine. The earthy mushrooms enhance the mineral character.

  • Baked scallops with cauliflower cream
The sweet taste of scallops and the soft cauliflower match enhance the elegant and slightly nutty character of the wine.

  • White asparagus with butter sauce and a soft-boiled egg
The roundness of the wine complements the creamy butter sauce, while the fresh acidity cuts through the fattiness of the egg.

  • Goat cheese quiche with spinach
The fresh acids of the wine contrast beautifully with the creamy, salty goat's cheese and the green notes of spinach.

The brothers Pascal and Laurent Borgeot, the fourth generation, manage the family domain, which was founded in 1903. The domain is located in the village of Remigny in the Saône-et-Loire department, a few kilometers from Chassagne-Montrachet and a little closer to Santenay, where the brothers own a number of important plots. The village of Remigny is a rarity in Burgundy. It has no name of its own.

It is not in the Cote d'Or. It is located in the department of Saône et Loire. Yet you will find parts of both the Chassagne-Montrachet and the Santenay appellations here. We are only four winegrowers in the village, says Pascal Borgeot at Domaine Borgeot. In our case, it was our great-grandfather who created the domain. At the time it was only five or six hectares of vines, but he also grew other crops. Remigny is a village of 420 inhabitants, four kilometers south of Chassagne-Montrachet and three kilometers east of Santenay.

The Canal du Center cuts through the village and just south of the village is the top of the Côte Chalonnaise, with Bouzeron, Rully, Mercurey, Givry and Montagny. It used to be one third white and two thirds red on the domain, says Pascal Borgeot. Today is fifty-fifty. We now have more vines in Chassagne-Montrachet and Santenay. We have much less Bourgogne Aligoté and the Bourgogne Passetoutgrain has completely disappeared. There are no more gamay vines on the domain. We only have chardonnay, pinot noir and aligoté. The aligoté vines are located in both the Bourgogne Aligoté appellation and the Bouzeron appellation.

Together they cultivate 48 hectares of vines, half in red, half in white. The majority of these vines are 30 years old or more, with plots of Santenay 'Les Gravieres' and Santenay 'Vieilles Vignes' over 50 years old. For more than twenty years, their vines have been fed only organic fertilizers. They work the soil in winter to control weeds and increase microbacteriological activity. Where they have replanted, they have chosen low yielding vines. All this policy is aimed at bringing the harvest to full maturity as often as possible. The fact that the Borgeot brothers use only organic fertilizers, pay close attention to soil conditions and strive to limit the yield of the vines, of course shows that the health of the grape harvest is of primary importance. Without it, no amount of winemaking skill, technology or special equipment can produce great wine. Having said this, the brothers are perfectionists and every step of the winemaking process is carefully studied. The excellent quality of their harvest is brought to its fullest using traditional methods and modern insights.

The Domain Borgeot, founded by Pascal and Laurent Borgeot in 1985 with some important plots of Santenay vines inherited from their father, has become one of the most respected wineries in the Cote de Beaune. Through smart vineyard acquisition and investment, they now have an impressive list of appellations and with a modern micro-negotiation on the side, they can offer their wines for export. However, their reputation locally is such that more well-known producers often send their children to apprentices on the domain.
