Description
The excellent ripeness of Cantemerle's Cabernet Sauvignon is clearly visible in the foreground through its level of concentration and complexity – the sign of a great Médoc wine. Before tasting this fine bottle, put it in a decanter an hour before serving. After this preparation you will discover the fuller aromatic richness of the wine: the bouquet with notes of cherry, olive and tobacco as well as hints of oak. On the palate, silky tannins launch a symphony of spicy, peppery and fruity flavors on the palate that are of high quality and generously supported by a long, full softness. The aftertaste is long and lively, neither weak nor harsh. A well-constructed balance is the basis with a good structure of freshness and elegance that perfectly supports the power in this wine. The concentration carries the fruit perfectly and gives a very long aftertaste with fresh fruit. The wine is already very drinkable in its youth
The vineyard covers 96 hectares on pebble and gravel soils from the Quaternary era. The wine is a blend of 68% Cabernet Sauvignon - 23% Merlot - 5% Cabernet Frank - 4% Petit Verdot and the average age of the vines is around 40 years. The grapes are hand-picked with selective sorting in the vineyard. The vineyard has an HVE certification. Upon entering the Chateau, the grapes are destemmed and then sorted by hand before being crushed. The fermentation lasts 6-8 days at 24 -28°C and the maceration: 20 -25 days and then the Cantemerle's matures for 12 months in French oak barrels (medium toast), 40% of which are new. Château Cantemerle is one of the oldest estates in Bordeaux, the first reference (the Lords of Cantemerle or La Sauve Majeur Abbey) dates back to the 12th century. The name comes from a black bird 'Le Merle' that sang loudly during the hunt on the estate. "Canta Merla" also called the song of the blackbird! Around the 16th century, vines were first anchored in the deep gravel soil. The château is beautifully situated just outside the village of Macau, south of Margaux. If you drive from the city of Bordeaux on the D2 to the Medoc, Cantemerle is one of the first large chateaus you encounter. In the classification of 1855, Cantemerle is engraved in stone as 5th Cru, to remain there forever. Cantemerle's acreage is impressive with 92 hectares of vines, planted with 60% cabernet sauvignon, 30% merlot, 6% cabernet franc and 4% petit verdot. In the last 10 years, cabernet sauvignon has gained ground at the expense of merlot. However, the biggest change in planted varieties started in the 1980s when cabernet franc still accounted for 24% of the area.
