The history of Domaine Henri Boillot dates back to the late 19th century. It was originally founded by Henri Boillot's grandfather, Henri Boillot Sr., who began acquiring vineyards in some of Burgundy's most prestigious appellations. The estate's winemaking tradition was passed down from generation to generation. Henri Boillot Sr. was succeeded by his son, Henri Boillot Jr., and later by Henri Boillot III. Each generation continued to expand the family's vineyard holdings and refine winemaking techniques.
Henri Boillot owns and manages vineyards spread across approximately 19 hectares (approximately 47 acres) in Burgundy. Henri Boillot’s portfolio typically includes wines made from Chardonnay (white) and Pinot Noir (red), the primary grape varieties of Burgundy. One of the notable aspects of Henri Boillot’s winemaking philosophy is his commitment to minimal intervention in the winemaking process. This Saint Aubin Premier Cru is made from the best vines in Saint-Aubin, the exact distribution is unknown. The average age of the vines is 40 years. The soil consists of clay and limestone. The wine matures 50% in new oak barrels of 350 liters. It is a powerful wine with excellent minerality. Pure expression of Saint-Aubin with a good and fresh acidity.
