History of Merryvale and the Profile Series

Merryvale Vineyards is located in the heart of Napa Valley and is run by the Schlatter family. The Profile series is the estate's flagship wine. Produced exclusively in top vintages, this wine reflects the character of the finest parcels on the Profile Estate Vineyard. Since the late 1980s, Profile has become a household name for lovers of classic Cabernet Sauvignon blends with depth and elegance.

About the 2013 Profile Cabernet Sauvignon

The 2013 vintage is composed of 83% Cabernet Sauvignon, 12% Petit Verdot, and 5% Cabernet Franc. The grapes come from the estate's higher-elevation vineyards, where volcanic soils provide structure and minerality. The 2013 vintage is considered an exceptionally good year in Napa Valley, with a long growing season and optimal ripening. The wine offers ripe concentration, freshness, and a long, balanced finish.

Vinification and maturation

After careful hand-harvesting, the grapes are vinified plot by plot. The must undergoes cold maceration and a long fermentation period with skin contact. The wine is then aged for 22 months in 100% new French oak, after which it is bottled unfined and unfiltered. This process results in a full-bodied, powerful wine with aging potential until at least 2035.

Color, smell and taste

The wine displays a deep ruby red color with purple reflections. The nose offers aromas of black cherry, cassis, plum, cedar, and graphite, complemented by hints of dark chocolate and spicy spices. The palate is intense and structured, with layers of dark fruit, silky tannins, and a long, harmonious finish with notes of tobacco and toasted oak. Full, complex, and layered, with an energetic freshness that provides balance.

Wine and food pairings with Merryvale Profile Cabernet Sauvignon 2013

  • Grilled ribeye with rosemary and garlic: the tannin structure supports the fat and spicy flavors of the meat.
  • Oven-baked leg of lamb with thyme and roasted vegetables: savoury notes combine beautifully with the ripe dark fruit of the wine.
  • Wild boar stew with bay leaf and red wine: intense flavors perfectly complement the strength and depth of the wine.
  • Risotto with porcini mushrooms and Parmesan: umami and creaminess enhance the aromatic complexity of the wine.
  • Mature hard cheeses with fig compote: the salty texture of the cheese contrasts beautifully with the roundness of the wine.
