Description
Fèvre is a big name in the Chablis region, and for good reason. The name is synonymous with flawless and expressive Chardonnays, which have earned Chablis its reputation. This style is certainly evident in the wines of Nathalie et Gilles Fèvre. The results are truly a tribute to the unique Kimmeridge soils.
The wines in their range are available under two different labels: Nathalie et Gilles Fèvre (the current owners) and Marcel et Blanche Fèvre, but these are identical wines and apply to the entire range. We prefer the Marcel et Blanche Fèvre label, but that has nothing to do with the content; it's purely about the label and the overall look.
The Chardonnay grapes come from the hilly vineyards surrounding the village of Fontenay-près-Chablis. The soil consists of the characteristic kimmeridgian soil, a mixture of clay, limestone, and fossilized shells. The vines are between 15 and 25 years old. Fermentation takes place at a controlled temperature in stainless steel tanks. The wine is then aged on the lees (sur lie) for 10 months. This softens the wine and adds complexity.
In the glass, the Fèvre Chablis is lemon yellow in color with a nose of white fruit, such as peach and pear, complemented by citrus and minerality. This Fèvre Chablis is a fruity wine with plenty of freshness (citrus), white fruit (peach, pear), and a long finish. Delicious with Burgundian dishes, such as ham with parsley. Also wonderful with oysters.
