Aubert & Mathieu is the adventure of two friends who want to change the way wine is produced and consumed: a modern and committed vision. They make wines from the best terroirs of Languedoc Roussillon! The wines are characterized by our style that oscillates between freshness, the greed of the fruit and the respect for the typicity of the terroirs. High quality, cheerful and non-conformist. A committed vision for the planet is a key element in the vision. The world of tomorrow is being built today. This is translated into action with so there is serious attention to C02 neutral operation, preservation of local biodiversity, meaningful viticulture and eco-designed packaging.

Grape varieties and sustainable viticulture

The 2024 Palooza Rosé is a blend of typical southern French grape varieties: Grenache, Cinsault and Syrah. This combination provides a refreshing and aromatic profile. The grapes come from higher-altitude plots, which provides extra freshness and minerality. Aubert & Mathieu works with respect for nature and biodiversity, without the use of herbicides or synthetic agents.

Harvest, vinification and maturation

The grapes are harvested at night to avoid oxidation and to preserve freshness. After a short maceration, fermentation takes place at low temperature in stainless steel tanks, to maximize the fruity character. The wine is not aged in wood and therefore remains pure and expressive.

Color, odor and flavor profile

In the glass, the Palooza Rosé shows an elegant light pink color with a subtle shine. In the nose, aromas of fresh strawberries, raspberries and citrus blossom dominate. In the mouth, the wine is lively, with notes of red summer fruit, a light spiciness and a beautiful, dry finish with minerality. The balance between fruit and acids makes the wine particularly drinkable and gastronomically usable.

Wine and food pairings with the 2024 Palooza Rosé

  • Grilled zucchini with feta and mint – the saltiness of the cheese and the fresh mint perfectly complement the fruity character.
  • Chicken skewers with lemon and thyme – the juicy texture of the rosé accentuates the spiciness of the marinade.
  • Pasta with green asparagus and ricotta – the soft acids and aromas of red fruits combine beautifully with creamy textures.
  • Poké bowl with salmon, avocado and lime – the fresh acids keep it light and provide a nice contrast to the fattier components.
  • Tuna tartare with sesame and soy sauce – the salty and umami notes find a surprisingly elegant partner in this rosé.
  • Ravioli filled with lobster and lemon butter – a luxurious combination that beautifully complements the subtle spiciness and structure of the wine.
