Description
Aubert & Mathieu is the adventure of two friends who want to change the way wine is produced and consumed: a modern and committed vision. They make wines from the best terroirs of Languedoc Roussillon! The wines are characterized by our style that oscillates between freshness, the greed of the fruit and the respect for the typicity of the terroirs. High quality, cheerful and non-conformist. A committed vision for the planet is a key element in the vision. The world of tomorrow is being built today. This is translated into action with so there is serious attention to C02 neutral operation, preservation of local biodiversity, meaningful viticulture and eco-designed packaging.
The Aubert & Mathieu Palooza is a blend of Grenache blanc, Colombard and Viognier. The vineyard is located on Marnes (marl soil). After harvest, the grapes undergo a cold pre-fermentative maceration followed by traditional vinification. The dried grapes are destemmed, pressed and cold settled, after which they are racked and matured on the fine lees.
Taste the freshness and lightness of this Palooza white wine. The pale colour already reveals a rich scent experience, with an aromatic bouquet of white flowers, honey, rhubarb and candied fruit. In the mouth this wine surprises with a honeyed start, which is quickly refreshed by lively citrus aromas. The finish is slightly sour and thirst-quenching, with a pleasantly refreshing citrus note.

1. Grilled green asparagus with lemon and Parmesan cheese

The creamy texture of the salmon gets a fresh lift from the acidity in the wine, while the lime and dill perfectly complement the citrus character of the blend.
4. Chicken fillet with tarragon cream sauce
A classic combination where the tender chicken and creamy sauce form a beautiful base for the fresh, lively touch of the wine. Tarragon provides a subtle spiciness that goes well with the floral profile.
5. Pasta with fennel, lemon and mascarpone
The aniseed fennel and fresh lemon are carried by the creamy mascarpone. These elements find a natural harmony with the aromatic freshness and fine acidity of the Palooza Blanc.
6. Sushi with avocado, cucumber and crab
The soft textures of sushi are refreshed by the wine, while the umami of crab and the slight sweetness of rice accentuate the fruitiness in the wine. The wine stands up well next to soy sauce or a touch of wasabi.
