In the glass, it has a beautiful straw-yellow color, with a complex fruity bouquet on the nose revealing hints of citrus, pineapple, pears, and vanilla (from the wood). The taste is beautiful, full, and distinctly characterful. Furthermore, hints of flowers can be detected. This blend wine from Umbria is made from 85% Chardonnay and 15% Grechetto.
From Umbria comes this superb wine from Antinori, which can rival a beautiful Burgundy. Complex due to aging in wooden barrels. The aroma and palate display a unity of vanilla, acacia flowers, citrus fruit, and pear, followed by a full, creamy impression on the palate: unmistakably a Chardonnay. The Grechette grape provides original mineral notes. The finish lingers for a very long time. The wine is named after the family that owned Castello della Sala in the 14th century: Conti Della Cervara. The grapes for this fine white wine come from the 15 to 20-year-old vineyards of the Castello della Sala estate. The vineyards are situated at an altitude between 200 and 400 meters. The soil is calcareous, full of marine fossils and clay. Immediately after harvesting, the grapes are cooled to ensure they reach the press at a relatively low temperature. The grapes are pressed and fermented separately. To obtain the finest possible aroma, the skins are macerated in the must for approximately 8 hours. For further fermentation, the wine is placed in 225-liter French oak barriques for 15 days. Subsequently, further aging takes place in wooden barriques for about 5 months. The blend is created before the wine is bottled. Finally, the wine remains in the bottle in the estate's cellars for another 10 months for further aging.

The most impressive aspect of the Castello della Sala ethos is its ability to reinvent itself. This latest edition of Umbria's headline white is a true delight. Renzo Cotarella and his team have created an Italian masterpiece that is reminiscent of the great whites of Burgundy. The 2023 Cervaro della Sala opens to an elegantly reductive note of flint or crushed granite before sliding gracefully into silky fruit sensations, breakfast pastry and crème fraîche. It offers carefully balanced richness and textural importance. Winemaking is moving away from 500-liter barrels to embrace larger foudre. No bâtonnage is implemented. The wine is mostly Chardonnay, with a smaller part (between 5% and 10%, depending on the vintage) of Grechetto that has been further reduced in order to avoid any rustic tones from the Italian grape. Part of the Chardonnay does malolactic fermentation, but the Grechetto does not. This gives energy and verve to the final results. Castello della Sala has recently planted more Chardonnay (now totaling 80 hectares) for flexibility in choosing the best clusters. Throughout its many reinventions, this is the best Cervaro della Sala I have tasted.
I tasted with Marchesi Antinori General Manager Renzo Cotarella in the spring, when we went through various Tuscan reds, new releases from Puglia and these two magnificent white wines from Umbria. Castello della Sala, famous for its Cervaro della Sala Chardonnay and Grechetto blend, has seen many incarnations over the years, going from a heavier, buttery style and transitioning into a exceptionally energetic and tight wine with an elegant note of reduction. If you have loved Cervaro della Sala in the past, I absolutely urge you to taste this newest release.
Renzo Cotarella says that his personal flagship wines are whites, not his celebrated reds. "Whites offer a clearer view of fruit in its basic form and the terroir, if you think about it, because there is no maceration. You achieve naked flavors from the vineyard and have less margin for mistakes," he says.

Youthfully coy, the 2023 Cervaro della Sala blows off an air smoky reduction to reveal depths of crushed yellow apples, sesame seeds, pine shavings and nuances of vanilla custard. This is pure elegance in the glass, as silken textures envelop the palate. A bump of residual acidity maintains energy throughout, even as the 2023 tapers off tannic and potent, with a resonance of mineral-infused apricots. This is a suburb rendition of Cervaro della Sala.

Marquis Piero Antinori is in charge and is assisted by his three daughters: Albiera, Allegra and Alessia. Funny those three A's. In 1180, Ugo and Antinori di Rinuccino were officially named as owners of Castello di Combiate; a century later, the family who had moved to Florence were included in the register of the silk trade cooperative. In 1385, Giovanni di Piero, an indirect descendant, entered the wine guild as an apprentice. Since then, the wine-growing tradition of the Antinori family has been continuous. With the establishment of the Marchesi Antinori winery, the peak was reached in 1895 and already in 1898 the winery was built in San Casciano Val di Pesa, which is still the center of the widely branched group of properties in all major cultivation areas of Tuscany, Umbria. , Piemonte (since the early 90s through the purchase of the wine cellar Prunotto), Apulia and even California.
