Viña Casa Marín was founded in 2000 by winemaker Maria Luz Marín, who had one thing in mind: to make 'terroir wines' in Chile. Her project was both innovative and daring, but she is now loved and praised and an example for many others in Chile! María Luz is the first female winemaker and winery in Chile. After graduating from the University of Chile with a degree in agronomy and winemaking, Maria Luz worked in various wineries, including Romanee Contie. She has successfully positioned her fine, delicate wines in the top markets and among international critics, where they stand out for their high quality. Today, Vina Casa Marín is among the best in Chile and is a model of fine, elegant cool-climate wines.
Sauvignon gris is a mutation of sauvignon blanc. This grape has a pinkish, fairly thick skin that protects it from (fungal) diseases. It has a bit more body and structure than its 'blanc' brother. The Estero soil contains loam, volcanic material and some clay that provide just enough nutrients to develop the voluptuous structure that makes this sauvignon gris wine so popular. The wine is matured for 50% in large (500 liter), used French oak barrels. This wood is well integrated into the complex taste.
In the glass Sauvignon Gris Viñedo Estero is straw yellow in color and an exotic and spicy nose with some honey and yellow fruit. Round and firm taste, with melon, some pepper and a light toast of the wood, followed by a long and refreshing aftertaste. A very gastronomic wine!
This is a delicious wine with blanched white asparagus with thinly sliced raw salmon and a spicy dressing of Thai curry with lime and red pepper.

1. Grilled green asparagus with lemon cream and roasted almonds
The salty and citrusy notes of the wine perfectly complement the green asparagus and lemon cream. The toasted almonds add texture that contrasts with the freshness of the wine.
2. Sea bass ceviche with lime, coriander and red onion
The fresh acidity and salty minerality of the wine accentuate the citrus marinade in the ceviche. At the same time, the mouthfeel of the Sauvignon Gris provides balance to the spicy and raw elements of the dish.
3. Goat cheese salad with peach, mint and pistachio
The floral notes in the wine complement the aromatic character of mint, while the creamy goat cheese contrasts with the lively acidity. Peach and pistachio add sweetness and crunch that rounds it out.
4. Sushi with salmon, avocado and ponzu
The umami in salmon and ponzu is carried by the minerality of the wine, while the fatty structure of the avocado is softened by the fresh acids. This creates a harmonious whole.
5. Ravioli with lemon ricotta and sage
The subtle creaminess of the ricotta is refreshed by the citrus profile of the wine. Sage provides an earthy undertone that works surprisingly well with the slightly floral, salty components of the Sauvignon Gris.
6. Scallop tartare with apple, fennel and yuzu
The fresh crunch of apple and fennel fits seamlessly with the lively profile of the wine. Yuzu enhances the citrus aromas and the delicate scallops are beautifully framed by the salty minerality.

Viña Casa Marín was founded in 2000 by winemaker Maria Luz Marín, who had one thing in mind: making 'terroir wines' in Chile. Her project was innovative and daring, but she is now loved and praised and an example for many others in Chile! For several years, María Luz has been assisted by her son Felipe, a winemaker who gives shape to his mother's dream with the same passion and drive. Today the domain has 50 hectares of vineyard divided into 38 different plots. Much of the vineyard is located on limestone and granite soils. These conditions result in vines that can produce superior quality fruit. All grapes are harvested by hand, only when they are perfectly ripe. Due to the great diversity in terroirs and grape varieties, coupled with the cool climate, the harvest takes a very long time; from the beginning of March to the end of May! All harvested grapes are vinified separately in small vats.
