The Rully vineyard is situated on the Côte Chalonnaise, more specifically between the Bouzeron and Mercurey appellations. The vines stand here on gently sloping hillsides at an altitude of approximately 300 meters. The village is one of the most important breeding grounds for Chardonnay in Burgundy. The appellation produces white Premier Crus that can rival those of the best villages on the Côte.

Immediately after the harvest, the Chardonnay grapes are pressed in whole bunches in a pneumatic press, followed by static settling of the juice for 24 hours at 12°C. The must then goes directly into vats where alcoholic and malolactic fermentation takes place, and aging occurs for 14 months in French oak barrels and demi-muids. The lees are regularly racked to aerate the wine while preserving its freshness. The resulting Chardonnay is well-aged in the oak barrels, giving it notes of hazelnut.

The Rully has a pale golden colour in the glass. It has a fresh nose of yellow fruit and spices with a hint of brioche and vanilla. On the palate, the gastronomic texture is enhanced by discreet woody notes, providing a delicate peppery toastiness. This Rully is perfectly balanced with beautiful acidity that gives the wine good backbone. This Rully Blanc is a delightful glass to enjoy and perfect with a mushroom risotto.

Prosper Maufoux was founded by its name bearer in 1860 in Santenay, in the south of the Côte d'Or, where it remained in the hands of the Maufoux family for almost a century and a half in 1994. In 1860, Prosper Maufoux, a notary by profession, left his office to devote himself to his passion for wine. He founded his own house in Santenay, a Burgundian village in the south of the Côte d'Or, in the heart of the vineyards. His son Cyprien looked beyond the borders and brought Prosper Maufoux wines to the tables of England, the Netherlands, and the United States. He created a culture of openness to the world at home. The takeover in 2010 by Eric Piffaut resulted in significant investments in the winery, which resulted in a huge increase in quality. Prosper Maufoux is currently housed in the Château de Saint-Aubin, where there is plenty of room to guarantee the qualities achieved for the future. Towards the great growth in the south of the Côte de Beaune, in the heart of the Côte des Blancs, between Chassagne and Puligny, and the immediate vicinity of Montrachet.
